    Fish and veggie people

    I love these particular meals because they are fast and easy
    but they have big flavor and make me feel pampered. Atkins is
    known as a meat eaters diet, but we should be known for eating
    lots of fish and veggies!

    Scallops and Shrooms

    Cook Scallops on top of the stove
    with bacon, a dash of lemon, and any kind of dry or wet garlic
    Serve over 1 cup mushrooms boiled until tender
    in water and a pat of butter

    (Measure your mushrooms before cooking)


    Crab Quiche

    1 cup crab meat
    1/4 cup of swiss cheese
    3 eggs
    1/4 cup of cream
    seasonings of choice - i like a little pepper,
    a little italian seasoning, and a shake of powdered garlic

    you could also add some cooked veggies to this quiche if you like but I prefer nothing to distract my tongue from the crab

    spray baking dish, i prefer glass, with carb free cooking spray
    layer crab on the bottom of the dish
    seperate eggs - whip egg whites and put aside
    beat yolks and cream and seasonings together until smooth
    fold in whites
    pour entire mixture over crab
    sprinkle swiss cheese over egg mixture
    bake for approximately 20 minutes - until fluffy
    (ovens vary)

    Makes 4 servings - make sure to count the cheese and cream per slice in your daily totals


    Salmon with Rice

    Lay fresh salmon on tin foil
    Squeeze lemon on top of the fish
    Sprinkle Rosemary on top of the fish
    Refrigerate for about 10 minutes to allow the fish to absorb the flavors
    Then bake for 12 - 15 minutes - depends on size, oven
    Eat with a cup of faux califlower rice
    YUM!

    Mock Danish
    1 egg
    1 ounce of cream cheese
    1 dash of cinnamon
    1 dash of almond flavoring
    1 splenda packet
    1/2 teaspoon of flax meal

    Mix with beater, nuke in microwave for 125 seconds
    Dab a little butter in the center


    Pumpkin Flan
    5 eggs
    1/2 pint heavy cream
    1/2 pint water
    1 cup pumpkin
    5 splenda packets
    1 cap of almond extract
    dash nutmeg and cinnamon and pumpkin pie spice

    Mix together with beater until smooth
    Pour into baking dish
    Bake for approximately 40 minutes until set
    Makes 6 servings

      Mock Cheesy Rice

      Steam 1 head calliflower.
      Drain water from pot and re-add tender calliflower
      Add 3 Tbl heavy cream
      3 Tbl butter
      1 C shredded chedder/jack cheese
      I then use my beater to blend together and chop calliflower until it looks like cooked rice. (food processor or blender would work too)
      Season with salt and pepper and heat on stove until hot.

      This dish has been the most satisfying as it has the texture of lumpy mashed potatoes and gives you that same full feeling.

      Make sure you limit yourself to the daily allowed 1 cup.

        Favorite Induction meals

        1. Faux-jitas

        grilled chicken breast or steak
        grilled pepper
        grilled onion
        sour cream
        salsa/guacamole
        lettuce leaves

        Slice the grilled meat. Use the lettuce leaves as a tortilla and roll up the goodies within.

        2. Lamb chops with steam asparagus and homemade Hollandaise sauce

        3. Low carb Hot Brown Sandwich---cooked sliced turkey, topped with a parmesan cheese sauce, bacon and a slice of tomato. broil until everything is hot and the sauce is bubbly.

        4. Sausage, peppers and mushroom skillet dinner (make sure you have a sausage without carbs)

        5. Taco salad

        6. Roast chicken or turkey with faux mashed potatoes OR with faux mashed sweet potatoes (pumpkin puree with butter and cream) OR roasted curried cauliflower

        7. Cheese Burger with mayo and low carb ketchup and a side of turnip fries

        8. Broiled salmon with green beans or asparagus

        9. Seafood stew.

        10. Creamy chicken with mushrooms.

              turnovers -

              3 eggs - separated
              5 TBLS heavy cream
              4 oz softened cream cheese
              3/4 favorite shredded cheese
              favorite meat *sausage, crab, bacon, etc.*

              whip whites of eggs &amp; set aside. in another bowl, add cooked meat, cheeses, and egg yolks. blend really well, then slowly add in whites. Poor mixture in a greased muffin pan. Bake 375 for 20 mins. Makes about 9 muffins.

              I love this because you can customize it how you want. The original recipe called for bacon. I like it with sausage and mushrooms. The last time I made it I had sausage, mushrooms, and red bell peppers.

              You can also add more eggs or more cheese to make more muffins

              I also just made this this morning and it was uber tasty. I'm not to sure of the measurements cuz I just threw everything together, but this is about right:

              2-3 oz of sausage.. give or take...cooked.
              3-4 mushroom caps, chopped up &amp; stemless
              1 oz cream cheese
              2-3 eggs depending on how hungry you are

              after cooking sausage, drain grease. add mushrooms and cream cheese and cook till cheese is melted and everything is coated. then add eggs and scramble.

              Next time I make these I'm going to add some red bell peppers before adding the eggs... I've been on a red bell pepper kick, what can i say?

                Im 18 years old, about 5'3, i now weight 128, i weighted 130 before my two weeks on induction, i want to get down to 115
