  • Help w/ Veggie Count

    I have had this soup for the last few days because one batch has made a lot of servings.

    Was wondering if someone could tell me about how many veggie carbs this would account for?

    One serving is 4 carbs but not sure how to count it for my veggies.


    MOCK POTATO SOUP
    1 medium cauliflower, cut into small chunks, about 20 ounces after trimming
    1 small onion, diced, 2 1/2 ounces
    3 cups chicken broth (homemade recommended)
    3 tablespoons butter
    1/2 cup heavy cream
    Salt and pepper, to taste
    4 ounces cheddar cheese, shredded (pre-shredded not recommended)
    3 pieces bacon, fried until crisp and crumbled, optional
    2 green onions, chopped, optional
    2 tablespoons fresh parsley, finely chopped
    In a large dutch oven, bring the cauliflower, onion and broth to a boil. Cover and simmer until the cauliflower is very tender, about 20-25 minutes. Use a stick blender to puree the soup until completely smooth and thick. Add the butter and cream; mix well. Add salt and pepper to taste. Stir in the cheese; heat very slowly until melted. Garnish with bacon, green onion and parsley.
    Makes about 6 cups or 6 big servings
    Can be frozen without the toppings Per Serving: 263 Calories; 22g Fat; 11g Protein; 7g Carbohydrate; 3g Dietary Fiber; 4g Net Carbs

    You may want to try FitDay - Free Weight Loss and Diet Journal for the veggie carb count and enter the raw values....but I must say it sounds delicious and I think my daughter would L-O-V-E this!

      If you only want to look up foods, you can also use the USDA database:



      You need to see how many net carbs come from each of the vegetables in the recipe (you have quantities, so it's nothing difficult)... then add them all up and divide to the number of servings.

        Okay figured out my veggie carbs from the soup. And w/ 1 cup of soup equaling about 1 cup of my Veggies for the day too.

        Think I'm on the right track




        Mini Goals:

        175 lbs. (halfway point)
        157 lbs. (old average weight)
        135 lbs. (High end of my ideal range)
        125 lbs. (Almost there)

          That wouldn't be quite true, since there's more than vegetables in the cup of soup. None of the non-vegetable items would count as vegetables.

            That wouldn't be quite true, since there's more than vegetables in the cup of soup. None of the non-vegetable items would count as vegetables.
