  • Are these ingredients okay for induction?

    • 2 tablespoons rice vinegar
    • 2 tablespoons granulated sugar
    • 1 tablespoon light soy sauce
    • 1 tablespoon dark soy sauce
    • 2 teaspoons Chinese rice wine or dry sherry
    • 1/4 - 1/2 teaspoon chili sauce, or according to taste (I use 1/2 teaspoon)
    • 1/4 teaspoon Asian sesame oil
    • 1 1/2 teaspoons cornstarch
    • 1 tablespoon water
    • 1 tablespoon vegetable or peanut oil
    • 3 - 4 medium garlic cloves, finely chopped (4 teaspoons - 1 1/2 tablespoons chopped garlic)

If not, which would be okay and which wouldnt? In what amounts do they become hazardous to the induction phase?

Have you matched them against the Acceptable List of Induction Foods?

    >>2 tablespoons granulated sugar>>

    Not allowed on Atkins.

    >>1 1/2 teaspoons cornstarch>>

    Not allowed on Atkins.

I suggest you reread Chapter 11 of your book!

Re: Are these ingredients okay for induction?

As well as the sugar and starch items atkinsgal pointed out, a few of the other ingredients would not be 'legal' for induction.

Soy sauce can contain wheat so you would need to look at the list of ingredients on the particular bottles you have to find out if they do, and the wine will contain alcohol which is not 'legal' till the 5th level/rung of OWL.

You can often 'induction-ize' recipes by omitting some ingredients or substituting artificial sweetener for sugar, or do a search for 'low carb' and the name of the sauce/marinade you are trying to match.

Have you discovered Linda's low carb recipe website yet? She has a whole section on sauces etc.
Linda's Low Carb Menus & Recipes - Misc. Recipes
Again, look at the list of ingredients for any recipe you like the look of and check them to make sure they are all allowed on induction (or whichever level/rung of OWL you have reached).
Wondering how to get 'most' of your net carbs from your induction veggies?
Take a look at the thread from the latest Veggie Challenge to see how others manage it!
