  • tried and true, old favorites, atkins comfort recipes...

    what I had in mind was those meals that we keep coming back to over and over again. not the fancy ones, but the ones that keep us going throughout the week. failproof, easy, everyday.

    i can contribute my roasted eggplant and cauliflower. i do these separately, just slice the eggplant into about 3/4", and put them on a cookie sheet with lots of oil, garlic powder and pico de gallo, or some type of hot spice.

    then put them into the oven on broil until they're a little brown on top.

    i do my "popcorn"cauliflower the same. same dela, cookie sheet, oil, same spices, broil in oven about 45 min, til they get crispy and brown. soooooooooo yummy, beware of portion control for this one.

    i always make a lot of these veggies, and keep em on hand for the week.

    lately i've been falling back on my egglpant pizza for an easy fix.

    put 3 leftover eggplant slices, put some cooked ground beef on top (I always cook a whole bunch, and keep it in little packs in the fridge and freezer, makes life easier) put on a tablespoon of tomato sauce, and a little cheese on top. NUKE IT! and its ready

    anyone have any old favorites they want to share?
    nothing fancy, just the good stuff that keeps you going
    faithful snacks, easy dinners, favorite breakfasts?

    I like cauliflower au gratin with any grilled meat. For single serving take 1 cup frozen cauliflower and place in shallow oven proof dish. Add 1 tbsp butter and 1 tbsp cream cheese. Microwave for 1 minute until butter and cream cheese is soft and mix with the cauliflower. Top the dish with grated cheddar (about 2 oz) and bake at 375 until the cheese is bubbly (I use my toaster oven). You can add some chives to this dish when you add the cream cheese, or you can use a flavoured cream cheese.

      I cook courgetttes (zucchini) the same way as you do your eggplants (aubergines)

        Deep dish pizza, or pork rind pizza. Come to think of it, I haven't made any for a while!! It's great leftover and great in the freezer.


        Plain ol' oven baked chicken breast: Dip skinless boneless breast into beaten egg, then crushed pork rinds flavored with onion powder, garlic, Cajun spice, just about anything. Bake 350 degrees for 35-45 min and enjoy with Ranch dip.

        I know I'm a sweetaholic, but low-carb cheesecake is great when I feel deprived and my family loves it, fresh strawberries on top! MMMM..... heading for the kitchen......

          Flax Muffins, Scones, Elizellen's Microwave Flax 'bread'
          Steamed veggies of just about any kind, esp. green (snap) beans
          Mixed "spring" greens - I take a salad to work for lunch often

          I realize these are not "rocket science" type suggestions, but they keep me going.

          Canned tuna, dumped on the greens with a little oil and/or vinegar - a complete salad in a bowl.

            i think those are great ideas

            rocket science is nice, but it doesn't fill the plate every night

            thanks for all the ideas!

              Our all the time favorites: Tuna and Egg Salad scooped up with celery sticks - great lunch!
              I like to fill a crockpot full of frozen chicken breasts in the morning - by suppertime when I get home from work - ready to eat! Just sprinkle a little seasoning over them (legal seasonings of course) and you can vary the taste. Great, tender and moist and leftovers can be used in lots of other dishes!
              I even made chicken bacon ranch "pizza" the other day - put a little ranch dressing in cut up chicken, heat on a plate, sprinkle with cheese and bacon bits and microwave until cheese is melted -YUM!!
              Deep dish pizza saved us many a day when we first started Atkins!
              Same with Bacon Cheeseburger Quiche!
              My husband absolutely LOVES cauliflower fried up in the skillet - take fresh cauliflower, cut up into bitesize pieces and wash; fry up in a skillet with bacon grease; Great quick veggie!
              I've found so many life saving recipes through this board!

                Oh, yeah,

                Deviled eggs

                Chicken "nuggets" (pork rind breading) w low carb bbq sauce

                pan-fried catfish with tartar sauce made by mixing mayo with DILL relish (no sugar)

                  that chicken, ranch, cheese bacon mixture sounds great... i might have to try it, and catfish! nice! i don't think i've ever eaten it...

                  i went through my whole week at the beach eating tuna salad on porkrinds. eeeeeasy, just kept a big tub of tuna all ready, and kept coming back to it over and over.

                  also, i love tongue, and we found it on sale a while back. bought and cooked a bunch and tossed them in the freezer.... I'm a big fan of the freezer, I get bored of cooking every day

                    One of my favourite easy-cook dishes is to lay a rasher of bacon on a large square of cooking foil then a chicken breast then another rasher of bacon and fold the foil around it , pinching the edges over to make a sealed parcel.
                    Then bake it in the oven for half an hour or so. then open the parcel and top the bacon with a slice of cheese and leave it till the cheese melts.
                    Sometimes I put it under the grill to let the cheese brown and bubble.

                    Cooking it this way imparts a bacon-y tang to the chicken so I dont add any spices.

                    The original recipe called for a dollop of barbeque sauce on top of the bacon before adding the cheese.
