  • Extended Induction-ers, I need your help!

    Every monday, I add a new message in 14 Day Induction called VOTW, (Veggie Of The Week) where I showcase a veggie off the veggie lists.

    What I'd appreciate is if those of you who've been on Induction for a while could nip in and chime in with any suggestions that you may have for that weeks vegetable.
    I'm thinking that hearing from people who are having success with their Induction, and especially from people who were not keen on veggies to begin with, but now enjoy them, that this would inspire the newbies to expand their horizons.

    So if you could all just keep that in mind, that'd be great. It's all about paying it forward, and you never know when one of your suggestions may really make a difference in someone elses life. :yes

    Not an extended inductioneer however I am a former veggie hater! A couple of theveggies i discovered in induction with this woe were:

    cabbage - boiled or fried, with onions butter, salt/pepper..it's awsome and one head of cabbage goes a long way!

    Jicama - I could only find it at one store and now i can't.not sure if it's out of season? but it's amazing..especially raw! I also fried like 'chips' .

    Cauliflower - A veggie I used to despise, until i discovered that it picks up the flavours of anything you add to it. I love it now.

    Pumpkin - i buy unsweetened canned (not fresh)and I love it for both sweet and savory stuff (carbs are higher you need to be careful), microwaved with some salt and butter makes a nice sweet potato substitue, or with cream cheese, splenda and cinamon makes a nice desert.

    and finally red peppers..which i love raw cut into little squres and I have
    them with dip. it's a nice crunch snack.

    LOL this makes me laugh when i read it now...before this woe the only veggies I would eat were lettuce, corn and peas!

      I love to make a kabob with marinated beef, zucinni, yellow squash, a little onion, and red peppers, yum, yum, yum!

        My fav veggie is green beans and cheese with a touch of sour cream it's soooooo good and I only have it once a month but, it's well worth the wait and I love it. MMMMM

          Have you done spinach yet? Yellow squash? Zucchini?

          I'd love to see info on Eggplant, spaghetti squash, butternut squash, leeks and rhubarb. :yes :yes

            I like to slice eggplant, spray both sides with olive oil and grill on the stove. Then, melt mozzarella chees on top. It always seems to stop my craving for pizza, believe it or not!
            Oh, and I dip it in some ranch dressing.

              I don't think butternut squash is induction friendly? Though i will admit is is awesome! but it's very sweet, i'd imagina it's fairly high carb?

                We'll get to all the veggies..lol...I only do one a week....thanks for the suggestions!

                  My absolutley new favorite veggie is spagetti squash. I cut it in half and take out the seeds. Then put it "meat" side down in a glass dish with 1/4 cup water and micro until its soft (usually about 12 mins). Then take it out, let it cool and get a fork and rake it across to make spagetti like strings into a bowl. Add butter and parmesan cheese .. Viola!!

                  Its so very good! Easy too eat too much, so make sure you measure your 1 cup.

                        I love to gently fry a little onion and garlic in olive oil and then toss in zucchini, or eggplant, or cooked spinach or cauliflower.... and others. Cook until the main ved is done. Yummy!

                          Bok Choy is great! I especially like it in soups. It is a vegetable commonly used in chinese recipes. It grows as a white stalk (kinda like celery but a little fatter) and it has leafy greens on its stalks....You cook it until the stalks are kind of soft.....It is great boiled in chicken stock with other veggies and you can also add chicken, shrimp, pork etc... to make a very satisfying soup.

                            I never really ate asparagus, but have a great recipe with steamed asparagus, some cheddar cheese and a bit of lemon juice, zapped in the microwave. I also made some marinated red peppers, in a vinegrette type dressing, as a side dish,,,,so yummy!
