  • Veggie Question

    I think I already know the answer to this, but I need to hear it from someone else...

    (not sure if this belongs in the General forum)

    I really don't care for most of the 2 cup veggies...I'm really picky about my lettuce so I only eat salads occasionally. I like cucumbers, but I'm starting to get burnt out on them. I've tried most of the other 2 cup veggies that I've been able to find at the local grocery stores and don't particularly care for them.

    However, I LOVE a good deal of the 1 cup veggies...

    So here's my question...Would it be okay for me to eat only one cup from the 2 cup veggie list and eat 2 or more cups (depending on net carbs) from the one cup veggie list?

    Something tells me the answer is no...I must eat at least 2 cups of veggies from the 2 cup list each day...I guess I'm just hoping I'm wrong. LOL

    Dr A gave two methods for making sure you ate the right amont of net carbs per day:

    1. Count the number of cups of vegetables

    2. Count the net carbs that you eat in everything.

    I think if you count net carbs and ensure that 12 to 15g come from vegetables you will soon see that you can eat a lot more vegetables.

      Think about it. If it was just about thos enet carbs, Dr. A, could hav etold us to eat alle the veggies we like, just stay in the net carb and total cups range, right?

      The 2 cups or salad veggie list contains mainly leafy vegetables - what exactly have you tried so far? These are not very 'sweet' in taste so they won't trigger cravings, and even more important, they have looooots of fiber and valuable nutrients. Green leafy veggies are one of the best health ("power") foods you can have. I am sorry you don't like them ... but there may be ways to make them more appealing to you.

      So, why not post what you have tried and how you prepared it in the cooking chat section - we could give you a few ideas to spice up your eal plan, I'm sure

        Since you are posting in the OWL forum, I'm assuming you are on Rung 1 of the OWL Carb Ladder. Therefore, you will continue eating your Induction vegetable allotment plus an additional 5 net carbs of any of the Induction veggies from either list.

            hey Buddy, you do know you can hide those veggies into your food. If you make meatloaf, finely chop some veg like celery and onions, saute them and mix it into the meatloaf mixture. The veg will add moisture and you'll eat your veggies in your food. Likewise, you can make gravies by cooking chopped celery and onion in the roasting pan along with whatever you are roasting, like chicken or beef. The veggies will absorb the cooking juices. When the meat is cooked, the veggies will be soft. So throw them and the cooking juices into a blender and puree until smooth. Bring the pureed mixture back to a boil, adding liquid to the consistency you want----and you have gravy. you can thicken stews the same way.

            A jar of roasted red peppers can be drained and rinsed. Toss it into a blender and puree until smooth. Bring it to a boil, toss in some heavy cream and you have a red sauce for chicken or fish.

              Hiding the veggies in meats is a really great and tasty idea.
              And don't forget spinach!
              (Spinach is on the 1 cup list, but the general opinion is that it's a typo and it should belong on the 2 cup list.)
              Since we are to measure our veggies raw, you'd pack a cup with spinach, then microwave it or steam it and watch it cook down to about 1/5th it's original size. Mix that in with some scrambled eggs (or meatloaf mix)and there ya go! Spinach is a nutritional powerhouse!
              Same with mushrooms. I like to finely chop mushrooms, celery and a bit of garlic, some fresh parsley and saute it right down with some butter. You can spread this on a raw chicken breast, roll it up, coat in grated parmesan and bake it.

              You can also roll up some spinach and feta in chicken breast...so good!

                don't forget you can hide them in sauces too. pureed and added to pesto sauce spinach hides well. spaghetti sauce can hide a multitude of them too.

                if you boil radishes the hot flavor and colr are gone and you can use them for potato salad even french fries if you get the long white ones.

                add some to soup and you can thicken it by purreing them. Pumpkin, and cauliflower can hide in lots of stuff.
