  • Frozen Berries

    Tomorrow I'm ready to start the berries rung. Last time I did Atkins, they were in season, and I just enjoyed them fresh. Now I will be relying on frozen berries. So how do you eat them...what do you put them in? I don't want to make a bunch of sweet desserts like berry cheesecake, and I really try to keep my Splenda intake to a minimum.

    You can let them thaw in the fridge, or keep them slightly frozen. I eat berries with yogurt, with cottage cheese, and with cream/whipped cream. They berries shouldn't even really have to be sweetened. If they are a bit tart, I put in a couple drops of stevia.

    Just make sure the berries you buy are UNSWEETENED. Check the ingredients list. Some brands are just flash frozen, others add sugar.

      Since 5 net carbs of berries is so little, I use them in sauces for meat and vegetables. For example, throw defrosted raspberries/blackberries into a blender and whirl until smooth, then mix into a viniagrette dressing---goes well with pork or chicken. If you pan fry a steak or chops or something, when you make pan sauce ( by adding a couple tablespoons water into the hot pan and stirring up the browned bits) add the berries, as the cook down, they thicken the sauce and again it goes well with pork, chicken, and steak because the sauce becomes like a glaze.

      I use fresh berries in vegetable salads or I puree them and use them in viniagrettes and glazes too.

      Make doubly sure you are buying the unsweetened berries.

        Like Juli I put them in yogurt or ricotta.My fav is frozen blueberries in yogurt .

          I like a little yogurt or sour cream, heavy cream, use a blender, instant smoothie...

              I LOVE frozen berries dipped into a little bit of cream cheese mixed w/ a dash of sugar free vanilla sweetener, I like them slightly frozen the best!!
              I like to dip fresh berries into homemade sf vanilla whipped cream...

                    I definitely second the idea of putting them in salads. Think of restaraunts that put berries (later, fruits) on their salads. YUM!
