  • OMG....Shiritaki Noodles!

    I ran across a thread on another forum on Shiritaki noodles - basically they are noodles made from the root of a plant and end up having 3 carbs per serving (2 fiber so 1 total if you net).

    This intrigued me as I used to love noodles, butter, garlic, and chicken all heated up together. So I went to the local price chopper and they had some....time for an experiment. The brand they had was tofu/yam flour based but it was still 2 fibers and 1 regular carb so I picked up a test package. The whole package had 80 calories.

    They have them in all sorts of shapes linguine, raman looking noodle, lasagne looking, and they really do look and feel like pasta. I used a Raman looking package and made my dish.

    IT WAS AWESOME!!! Just like eating pasta again without the carbs! They are tasteless until you cook them up (I slurped one), but wow when they were done cooking............mmmmmmmmmmmmmmmm

    I guess not a lot of places have them, but they are popular at chinese grocers if you have one in your area. I highly reccomend trying them!

    Anyone else love these/tried these?

    Tried them. They aren't bad.

    My boss once wrote to Dr. Fred Pescatore about them and low carbing. Dr. Pescatore was the Assistant Director of the Atkins Center during the 1990s. Anyhow, Dr. P. said to limit them to a 1/2 cup serving once a week. My guess is that they have no real nutritional value when compared to something like spaghetti squash.

      There were lot's of raves regarding these noodles ages ago on this board. I'm still trying to find them. Where did you buy yours?

        I grew up with these noodles! My mom usually made them with garlic and soy sauce! Yum!! It's also called Konnyaku. They've been in every Asian supermarket I've ever been to. So if you can't pronounce Shirataki , ask for Konnyaku (cone yahk coo).

        You are right in that they are tasteless on their own. They readily absorb flavors of whatever you add to them.

        When I'm out of induction, I hope to add this back to my menu.

          I found them at Price Chopper in the organic foods section - I am not sure what parts of the country they are in. I think I saw there may be somewhere you can get them online.

          Yeah they don't have much of anything in them - works for me currently as I am reducing calories some to reduce BF%.

          For some reason I can't bring myself to like spaghetti squash..I know I must be preparing wrong or something. I generally am deficient when it comes to cooking skills!

              Really? That far back?? It's not llike it's a russet potato that'll spike your blood sugar. It's mostly water and soluble fiber. Like with everything else, you wouldn't want to eat too much of it. Maybe 2Big can help us out here??

                I'm definitely going to try these. Got lots of hits on Aussie google including this nice recipe http://www.abc.net.au/newcastle/stories/s1219894.htm for Chicken and Vegetable Hot Pot.

                For fellow Aussies, Kan Ton (avaulable in most supermarkets) make some.

                  Oh yeah! They are awesome...I just posted a recipe for a pad thai recipe I did ... they are great. And I got mine at a oriental market too...none of the large supermarkets carried them.

                    I have seen such raves about these noodles, too, and am anxious to try them (after induction of course, as biogeek says.) Do we really have to wait until so far up the rungs to eat them??

                          the stuff is treated in the making so it is one big blob of glucomannan, a soluble dietary fiber. We had an email from the Atkins center to one of our Asian members back in 2003 stating they were acceptable as the book dealt mainly with veggies availible here in the US. there some other asian veggies listed in her inquiry too. some green thing Pammie and Shank ate and posted about was on the list too.

                              Here's the recipe, we really enjoy it!

                              Pad Thai
                              Made Low Carb
                              (adapted from an Emeril Lagasse recipe)

                              2 pkg of the soy/konneyaki noodles
                              1/4 cup fish sauce
                              2 tablespoons rice wine vinegar
                              2 tablespoons splenda
                              2 chicken breasts (or desired protein, pork or shrimp would be good too)
                              1/4 teaspoon cayenne (or to taste)
                              3 tablespoons peanut oil (a variation was 1 T peanut oil, 2 T peanut butter)
                              2 tablespoons minced garlic
                              2 large eggs
                              2 cups bean sprouts
                              2 cups sliced green onions
                              1/4 cup chopped roasted unsalted peanuts
                              1/4 cup minced fresh cilantro
                              1 tablespoon fresh lime juice
                              Drain the konneyaki noodles, rinse with cool water and then drain, set aside. In a small bowl, combine the fish sauce, vinegar, and splenda, and stir until the splenda dissolves. Set aside. Season chicken with the cayenne. In a wok or large saucepan, heat the oil over medium-high heat. Add the garlic, and cook, stirring, for 30 seconds. Add the chicken and cook, small pieces only take about 10-15 min total. Transfer to a plate and cover to keep warm. Add the eggs to skillet and cook, stirring, until just set, about 45 seconds. Add the sprouts, onions, fish sauce mixture, and noodles, and cook, stirring, until warmed through. Add the chicken, and peanuts, and cook for 30 seconds. Transfer to a serving platter and toss with the cilantro and lime juice. Serve immediately.
