  • Potato skins

    I know I know, potatoes are BAAAAAAAD, and I haven't had a bite in almost 3 months, but I have a question about the skins.

    When I microwave russet potatoes for my hubby he won't eat the skin, and the skin slides right off with almost no starchy stuff on it. The skins are high in vitamins and fiber. Can I scrape off any remaining starchy stuff and eat just the skin?

        OK we are not supposed to eat anything not listed by Dr A. so the official answer is no but fitday shows skin only at 4 carb per 1 potato.
        I will now duck and run for cover.

          I'm on OWL so potatoes aren't "bad" on my phase of Atkins. In fact, I'm having some potato with my corned beef and cabbage tonight!

            Maybe the skins are mostly fibre... interesting.

              The way I see it, it's the inside of the potato that has all the carbs. The skin itself is paper thin and has almost no starch on it at all. But I was wrong when I stated that the skin has vitamins...it doesn't. But it does contain fiber and potassium.

              Every night I make a potato for DH, and every night I look longingly at that bit of skin before tossing it in the trash. I'd love to be able to dab some butter on it and enjoy the best part.

              And I know Dr. A had reasons for the list he created, but I will never be able to follow it to the letter. His book will never be my 'bible' and I will never be a 'true follower' of the Atkins Way. But as an intelligent person I will use his research to make educated decisions.

                As Megs has indicated - yet another advantage of moving to OWL is that before too long you can 'indulge' in the occasional potato if you ahve no bad effects from eating them.

                Nowadays when my DH has fried potatoes (about once a fortnight) at lunch I eat a few of them too!! Though I always do eat all my own lunch first and stop at 2 or 3 pieces only!!
                Wondering how to get 'most' of your net carbs from your induction veggies?
                Take a look at the thread from the latest Veggie Challenge to see how others manage it!

                  Potatoes and their skins are a severe trigger food for me, so I've sworn them off forever. Now that I've found turnips, I don't even *think* about potatoes any more!

                  Gotta love Atkins .. there's always something BETTER to eat!

                    That's totally up to you.

                    But I want others reading this thread to know that Induction is not the entire Atkins diet. The vast majority of us are not stuck eating 20 net carbs daily to lose weight. According to Dr. Atkins (DANDR 2002, Chapter 13) "People with high metabolic resistance can benefit from doing Induction longer than two weeks because it gives them time to correct the metabolic imbalances they may have developed over time." And he devoted an entire chapter to metabolic resistance.

                    The vast majority of us can eat nutrient-dense foods like potatoes, corn, oatmeal, apples, bananas, peaches, carrots, navy beans, etc. These foods are "legal" foods during the On-Going Weight Loss, Pre-Maintenance and Maintenance Phases of Atkins. I want people to know that if you follow Dr. Atkins recommendations, these foods may be added to your diet without sacrificing weight loss.

                      Good reminder to all members not yet started on the OWL adventure!!

                      I had a slice of stoneground wholewheat toast with my scrambled eggs yesterday too!! No cravings or weird effects so far!!

                        This is so true. Yesterday I ate greek yogurt with strawberries and Uncle Sam's cereal mixed in for breakfast, carrots with sour cream dip for a snack, a huge salad with tuna, capers, and bacon mixed in for lunch, an apple with peanut butter for second snack, and a shirataki noodles and chicken for dinner. All completely legal, and not even that many total carbs for the day. No one except you guys would believe that this is "doing atkins."

                        But to return to Chupa's initial question, I'm betting that just the skin of the baked potato has even less than the 4 carbs indicated in Fitday. I bet fitday assumes people will eat some of the potato with the skin the way you get them at restaurants. Remember, an entire baked potato has 50 or so carbs, and the skin is a miniscule part of that.
