      Well here was tonight's dinner.

      It was mini-chicken fillets, wrapped in bacon with a lil bit of tomato & marscapone sauce poured over them, with green beans and a half red pepper stuffed with egg, cheese and spring onion.

                  You guys are making me so hungry!! Too bad I have 4 hours til I can eat (lack of food in house right now...REALLY need to go to Walmart, but my boyfriend has the car at work)

                        Yummm. What is your recipe for the tomato and mascarpone sauce??? Are you sharing???

                          I love the Food and Cooking Chat but I've only ever seen 3 pictures there and my posts tend to get ignored. Maybe it's because I'm not a "regular." I feel like I'm back in highschool again when I go there....lol.

                              here is the recipe.......you take one very chunky baby........oooohhh....sorry, you mean the quiche!

                              Here is the recipe. I eat it with sun dried tomatoes and fancy olives. I am trying to find a way to create master cook file for those of you with it. I took this recipe from the internet, then re-invented it. I used the original recipe as a loose guideline, then I added it my mastercook 8. It has 4 net carbs per serving, 2 fiber grams.


                              Greek Spinach Quiche low carb

                              Recipe By :
                              Serving Size : 8 Preparation Time 30
                              Categories :

                              Amount Measure Ingredient -- Preparation Method
                              -------- ------------ --------------------------------
                              10 ounces frozen spinach -- chopped
                              1 cup cream
                              8 ounces feta cheese -- crumbled
                              5 whole eggs -- whipped
                              1/4 cup butter -- melted
                              1/4 cup Romano cheese -- grated
                              1/4 cup parmesan cheese -- grated
                              1/4 teaspoon pepper
                              1/2 teaspoon salt
                              2 teaspoons nutmeg
                              1 cup Portobello mushrooms -- chopped
                              3 tablespoons red onion slices -- sliced 1/8-inch thick
                              2 tablespoons sun-dried tomatoes, oil-packed




                              preheat oven to 350 degrees


                              Cook the spinach according to package directions; drain well (pat water out with paper towels). saute mushrooms in butter (don't use the 1/4 melted butter listed in ingredients. That butter goes in the bowl with the rest of the ingredients).

                              Combine the spinach, mushrooms, and all the remaining ingredients (except red onions and a little of the romano/parm cheese) in a mixing bowl, or food processer (I use).
                              pour it in a buttered pie pan (glass preferred).
                              sprinkle top with shredded romano and parmesan cheese, followed by sliced red onions.
                              I sometimes save a few nice sliced mushrooms and decorate the top a little.




                              Bake at 350 degrees for 35 minutes or until a knife inserted in the
                              center comes out clean. Let stand 10 minutes before serving.

                              Serving ideas: This is great with some sun dried tomatoes and olives. I like it better after it has been refridgerated. Tastes great cold!

                              It sounds hard to make...but it's not....it's easy. especially with a food processer.
