  • flax, coconut flour, almond flour and the like

    Hello everyone,

Where does one get flax for recipes? I'm guessing it's ground flax?

I'm also curious about almond flour, coconut flour. Are there ok for this WOE and to what degree?

    Thanks for the scoop!

Not knowing where you are located makes it hard to answer your question. But--Whole Foods Market in the USA has coconut flour, ground flax meal and probably almond flour, but I buy it elsewhere, so haven't looked there. I get all but the coconut flour at a local Amish bulk foods store. I've never tried the coconut flour because it's very expensive and I haven't heard much good about using it.

It's better to get whole flax seeds and grind them in a small food processor or coffee grinder, then store it in the freezer or do small batches just when you need it.

Almond flour is also known as Almond Meal. I use it to bake cakes and biscuits etc. Ground flax or flax meal can either be bought ready ground or you can ground whole flax seeds yourself in a food processor or coffee mill. I have never seen coconut flour here ( australia)so I cant help you with that - although i imagine it is just very finely ground dried coconut!
Flax can be used from induction ( Dr A suggests a tablespoon a day to help nature along in the plumbing dept- i made it into flax snaps --yum)
Almond meal ( and coconut)can be used once you are in the nuts rung. One ounce of nuts per day is the usual serving so you would have to weigh the almond meal and account for the carbs .
If i make a special cake for a birthday or something ... I May forgo my nut rations for a few days prior and after the event so as not to overdo things. NUts can cause some people to stall , so its best to be cautious. If i use almond meal for breading schnitzels etc i mix it with grated parmesan cheese to lower carbs and make it go further ( AND IS SOO YUMMY)

During Induction phase, flax is limited to 1 tablespoon daily, if it is being used as a fiber supplement. If it is used to relieve constipation, it can be used in higher amounts, until the constipation is relieved. If you want to use it as a food, then you have to wait until the On-Going Weight Loss Phase, specifically the nut and seed rung of the carbohydrate ladder. And during On-Going Weight Loss Phase, the limit is 1 ounce (dry weight measurement).

Almonds and coconuts also fall into the Nut and Seed category and are limited to 1 ounce during the On-Going Weight Loss Phase.
