  • Help me find BACON, PLEASE!

    Okay, I have been looking for bacon that meets all the Atkins ingredient requirements. I was able to find sugar free, finally. But I was reading the package this morning and I saw the word nitrite! YIKES! I'm gonna eat it, not wasting money here, but I'd like to know if any of you have a specific brand name that I could look for that meets all the requirements set forth by Dr. A.

    My package says:
    "Cured with water, salt, sodium phosphate, sodium erythorbate, sodium nitrite." * Sodium reduced to 160 mg from 260 mg.

    I believe it links to an outside article which describes that certain veggies actually contain more nitrates than bacon!

      For us, we've actually got Kroger brand no sugar added. And I just read the ingredients, and it reads exactly the same as yours. I have a sneaking suspicion that we've got the same bacon

        So I don't suppose I will worry about it too much then. I didn't know if I was messing up or not eating that yummy stuff!

          That is my basic strategy too. I am not eating bacon or sausage every day, I look for the lowest sugar I can find, (not maple flavor in other words!) and then don't stress over it.

            funny thing.. i dont eat bacon but i needed 2 pcs of bacon for a recipe i am making today..so i am at Krogers (fred meyers here in the pacific northwest) and at least 10 different bacons.. but they all have sugars, and nitrates... i bought the best one i think... hubby loves the bacon and eggs so i am suprising him this morning with it.. however...could not find anything sugar free or nitrate free...

            looks like no bacon for us again...

              If you have Kroger, do you have a Meijer nearby? They have sugar free bacon. It's not nitrate free, though.

                So what if you can't find sugar free bacon? The bacon I bought lists sugar as an ingredient but on the nutrition label is says sugar and carbs 0 % so is it ok to eat?

                  I'd go for it and see how it affects you. The curing process, where pork sides are soaked in brine, really doesn't have that much sugar. What you gotta watch out for is bacon (and ham) that has been glazed with sugar after it is cured and smoked.
                  Also you'll notice that many bacons cured without nitrates that they use celery juice or seed....which are naturally high in nitrates

                    All processed meats will contain nitrites.... Bacon, hot dogs, bologna... etc. etc. etc.

                      The ham and bacon in my frig don't.....however, they also have a pretty GRAY color We ordered our piggy from Good Earth Farms and got to tell the processor exactly what we wanted. YUMMY

                        in the "bacon section" of my local Stop&Shop, I found only one truly acceptable brand of more than 2 dozen varieties. There are several that are technically Atkins-safe ( no sugar.carbs ) but I am also interested in staying away from nitrates ( usually listed as sodium nitrate on the ingredients ), te good Dr. reccomended this, and I believe the common consensus among docs is that nitrates do have deleterious effects, but not necessary to avoid for atkins success.

                        so anyways, to make a long story short, look for "uncured bacon"
                        this is usually your best bet, but you'll have to find it in a large grocer, also, it is HIGHLY perishable
