Re: Going out to eat tonight: does this sound induction friendly?

I love green beans, but I can eat them at home--the mushrooms sounded to die for. I'm still drooling. I would have had to try the mushrooms.

    You did great!

I know. I was psyched up for the mushrooms, but I wasn't paying for dinner, so I thought it would be a little obnoxious to order a $9 appetizer to go with my $30 steak when the steak comes with veggies. I thought the steak was a la carte so I was going to get the mushrooms as my side. Oh well. I'm definitely going to try and make the mushrooms myself this week and see how they turn out...

Just got back from the (high-end) grocery store:
        large portobello mushroom caps: Check
        goat cheese: Check
        red pepper for roasting: Check
        Vidalia onions to caramelize: Check

Two pounds of organic asparagus, but that's another recipe. Steamed with Hollandaise sauce with my Easter ham)

Yum. Vidalias are already out? I'll have to start looking. One of the best parts of summer around here. Let us know how these turn out!

That mushroom dish DOES sound interesting.........Looks like Sunny is on the case right now. lol. I once spent a month looking on line and in recipe books for an eggplant dish I had at a local kabob house. Haven't found one that's even similar to the one at the restaurant, but I'm still trying.

I just finished. It was very drool-worthy. I made two big ones and I had to hurry and clean up the dishes and put the second one away to keep from eating it.

In about an hour and a half, I know I will be sorry for how much I ate anyway. I have to sing tonight, and sometimes I don't eat anything, and when I eat, it is something very small. I had planned on grilled fish and a small salad. That trouble-making lawyer, Slapshot, made the steak sound so good, I also had steak with the big mushroom. This was a very bad day to do this. Not only was this labor-intensive (did them on the grill), I had other "stuff" that really needed doing today.

I decided the other ingredients called for basil, so the marinade for the mushrooms used my homemade basil vinegar and I added basil to the veggie melange. It was just right. The only thing wrong, and it was a small thing, was the goat cheese was really good cold, but when it melted, it got a bit grainy.

I went to the restaurant website to see if they had a better description and a picture, but no luck. I just winged it, but I wouldn't change a thing. Good thing I don't know what the real thing tastes like.

Gotta jump in the shower and get dressed. More details tomorrow if anyone wants them.

hi guys, i know this is a bit late for the OP, but generally if i see 'caramalised onions' anywhere id run a mile - i used to work in a restaurant and we caramelised our onions with about half a pound of sugar and water...so please check how they make their onions before ordering them...dont want anyone messing up their diet because of it!!

Great minds think alike because I was just going to post this. Caramelizing involves melting sugar on food and for the Atkins follower, it basically turns your veggies into candy! So really, it is a good thing that Slapshot didn't get the mushroom dish after all.

Restaurants might, but all I use is a pinch of salt to get the juices flowing. I don't use any sugar. Since I use a really good cast iron pan, I don't even need to use any water for deglazing. Onions have enough natural sugar to caramelize just fine.

Re: Going out to eat tonight: does this sound induction friendly?

thanks for the report, Sunny! Glad they came out good. I got a sticky note on my fridge with the recipe. Will try next week.

As for the caramelizing, that's an excellent point. I didn't even think of it. I worked in about a dozen restaurants growing up and caramelizing was never done with sugar (we used the term caramelize to describe what happened to the taste of the onions, naturally, when sauteed). Anyway, no issue for me since I didn't order the mushroom, but will keep it in mind next time...
