If it does not make you run to the loo or give you gas etc then it IS being processed as if it was any other sugar carb and needs to be counted!
I might have gotten it backwards, good catch as always.

So much we have to watch out for! Yikes!
Nature's Promise makes a great uncured, sugar free, nitrate free bacon! YUM! I also found a great sugar free, nitrate free morning sausage. I have to stay away from pepperoni and dogscause the salt does me in! I swell up and retain so much fluid when I eat them- even the "good" ones.
When I make the family hot dogs I make a burger. No problems there.

If I recall correctly, this has "evaporated cane juice," which is sugar. You might want to check the package.

Yes several of those organic or "natural" products do not list sugar instead they list something called evaporated cane juice (DUH!!!!!)

              Re: carcinogens are yummy

I still remember reading in one of Atkins' writings that, in moderation, not to be concerned about the sugars in bacon as they "cook off" and that nitrates were the bigger concern, although I feel the consumption of nitrates, if they don't affect your weight loss, should be a personal health decision.

One more question regarding the SF honey - is there anywhere where sugar alcohols are listed as something approved for Atkins or is it just a YMVY type of thing?

Dr Atkins did mention one sugar alcohol in the section on sweeteners

                  Artificial Sweeteners
You must determine which artificial sweeteners agree with you, but the following are allowed: sucralose (marketed at Splenda®), saccharin, cyclamate, acesulfame-K. Natural sweeteners ending in the suffix "-ose," such as maltose, fructose, etc., should be avoided.
However, certain sugar alcohols such as maltitol do not affect blood sugar and are acceptable.
Wondering how to get 'most' of your net carbs from your induction veggies?
