  • veggie question :)

    i had a cup of cabbage and a cup of peeled cucumber and a cup of cauliflower today...and 2 cloves of garlic.

    did i have too many veggies?

    Did you count the carbs? Did you measure cabbage raw or cooked

    So the rule is 3 cups - two from the salad list and one from the other list. Both cabbage and cauliflower is from the other list (on pg 126 in my book)
    I would not panick about it though. It is the carbs we get from other sources that will be more problematic, (fillers in meats, sweeteners, dairy, drinks)

    Vegetables


    You can have two to three cups per day of these vegetables. They are called "salad" vegetables in the book

    alfalfa sprouts
    daikon
    mushrooms
    arugula
    endive
    parsley
    bok choy
    escarole
    peppers
    celery
    fennel
    radicchio
    chicory
    jicama
    radishes
    chives
    lettuce
    romaine lettuce
    cucumber
    moche
    sorrel
    These salad vegetables are high in phytonutrients and provide a good source of fiber.

    Other Vegetables
    You can have one cup per day of these veggies if you only had two cups salad vegetables

    The following vegetables are slightly higher in carbohydrate content than the salad vegetables:

    artichoke
    celery root
    pumpkin
    artichoke hearts
    rhubarb
    asparagus
    chard
    sauerkraut
    bamboo shoots
    collard greens
    scallions
    dandelion
    snow peas
    bean sprouts
    dandelion greens
    spaghetti squash
    beet greens
    eggplant
    spinach
    broccoli
    hearts of palm
    string or wax beans
    broccoli rabe
    kale
    summer squash
    brussels
    kohlrabi
    tomato
    bean sprouts
    leeks
    turnips
    cabbage
    okra
    water chestnuts
    cauliflower
    onion
    zucchini
    If a vegetable, such as spinach or tomato, cooks down significantly, it must be measured raw so as not to underestimate its carb count.

      thank you so much! it really helps! the other stuff i had was 2 eggs a chicken breast, and 2 pieces of beef bacon...and cheese...think i went overboard on the cheese.

          Nope...just sprinkled it on everything I ate! LOL...I won't be doing that again...3 oz max...thanks
