    i thought that jerusalem artichokes were tubers - like potatoes - tastewise and carby, somehow i remember reading that they were not Atkins friendly. My Atkins book is in a box this week since we are replacing bookshelves and i can't find it on the carb count list - does anyone have into on this?

      They are "Atkins friendly". Potatoes are too. But you are right saying that they are a starchy vegetable and only come in OWL Rung 8.

        I love fennel! Next time when you saute your fennel, add some ground sausage meat or ground beef to it. you can eat that as is, or cool it, mix in some grated parmesan or romano cheese, stuff it into a sweet pepper and bake it.

        I also like to whack the fennel into quarters add it quatered onions and sweet red peppers, rub them with olive oil, and roast it in the same pan with chicken thighs or leg quarters---it's a one-pan complete meal.

        You can use the frondy leaves as a herb for chicken or fish. And you can use the stalks in soup stock.

          For anyone wanting to identify a veg listed on the allowed list in case they can find it called by another name locally you could try doing a 'Google Images' search for it.

            What a great idea, Elizellen! Will do this for kohlrabi as I'm clueless LOL

            My DH is all excited about those fennel recipes haha Seriously he's all over that and wants to try the stuffed peppers ASAP!

                  My dad grew kolrabi in the veggie garden when I was a kid. It's a good potato subsitute in stews.

                  What's kind of odd is that the potato has only been in the worldwide diet since the 1500's, because it is a New World veggie. But it managed to replace other root or root-like veggies in things like stews to the point that folks can't use turnips, celeriac, etc. in those foods. Sad.

                  Kale is good too, especially this time of year. After a good frost, kale and collard greens become "sweeter" in flavor. Just like Brussel sprouts---their flavor improves after a frost. For some reason they become less pungent.

                  As for Asian veggies....Bittermelon is an acquired taste. However, in traditional medicine, it is a known blood sugar reducer. So I guess people eat it for that attribute. But veggies like fuzzy melon, luffa, garlic shoots, pea shoots, sweet potato shoots, tomato leaves, etc. are fine.

                  The one southeast Asian product I would love to try is the pili nut. It's also called a canary nut, because the tree it grows on is a canarium species of trees. However, they don't import it into the US. It has the highest fat content of all nuts and it's flavor is described as being like a pistachio-walnut-pine nut-almond.
