  • And here we are again

    This is my second time around on Atkins, I made it to 10 lbs of my goal last time before summer living got in my way 2 years later and now I'm determined to take it all off and keep it off. My biggest challenge is time - I need convenience foods - something I can eat while driving or I can make in 5 minutes so eggs and cheese are my staples. I'm not a big wiegher but last time I went to the doctor and she said 170 I almost cried so I went home and got out my atkins book and here I am. I feel bad I went to a party and the champagne toasts got me know my stick is only light pink - oh well I'll just be extra good for 2 more weeks and I'll be right back on track

    nice to have you back - you know this WOE works so you won't have any problems. If you used this site before you'll know the people here are so helpful and will give you all the help you need. If you didn't use this site, well, that's what we are here, helpful and ready to give all the encouragement you need.

    As far as quick things to eat on the road, my suggestion is to get a small cooler. What I can think of right off my head are:
    1. buy string cheese or cut individual 1 ounce servings of cheese.
    2. celery with cream cheese
    3. ham/turkey that you can roll up and eat with mayonaise or cream cheese
    4. hard boiled eggs (or deviled eggs)
    5. take deluxe cheese and microwave it (make 4 pieces out of each slice) for 60
    seconds - they taste like cheese crackers.
    6. make up tuna salad

    if you take a few minutes to fill your cooler you can eat a lot of things out of it. I bought my husband a cooler at Walmart for $9.99 it's tall and holds bottles of water also - it's easier for him to do this WOE. Hope this helps! When you get a chance use a few minutes of your time to do a few squats or walk up and down the stairs, park further from the front door -- these are all ways to get exercise into your daily routine.       jpcvna - Welcome! Don't worry, I know I have felt EXACTLY the way you do and so do a lot of other people here! I came here just 5 days ago and already I feel like part of the family We can all do this, so don't shed anymore tears over the scale. It'll be your bestfriend before long if we stick through this together.

      As for convenience foods, I've found it best to just prepare in advanced. For instance, just buying some vegetables and cutting them up and putting them in a plastic baggie to take with you. I particularly like raw cucumber Tastes sweet, and with a little splenda it can taste just like fruit.

          Welcome, jpcnva!

          Do you have one day a week you could make up some portable meals and snacks? If you could do that, it would really help add variety throughout the week.

          Little crustless quiches made in muffin tins are portable. You could freeze them and take them to work with you, then zap them in the microwave when needed.

          Maybe make up chicken or egg salad and eat with celery sticks or cucumber slices?

          Imagood1's suggestion about the small cooler is EXCELLENT. You can freeze a bottle or two of water and put them in there. They'll keep all the perishables cold... and be thawed and ready to drink after a while. Or you can use the blue ice packets.

          The cool thing about the high protein, high fat foods is they will satisfy you and keep you from getting so hungry that you'll eat anything!

            jpcnva - Planning is key and will help keep you on track. Sunday's are my plan day. I sit down and make a rough draft of my weekly meal plan. I keep in mind the days that I work, activities, etc. I find on days that I work, I work 12 hour shifts, I have no desire to cook when I arrive home. My crockpot is my best friend. I pull out chicken, roast, what have you the night before. In the am I put in crock with a bit of water and seasoning. When I come home it's done and all I have to do is add a salad or frozen veggies. Great for leftovers for lunch the next day too! As suggested, fresh veggies already prepared are easily transportable or quick to grab when hungry out of the frig. Remember the week isn't written in stone either. I shop by my list so have what I need, but if on Tuesday what I had planned on Thursday sounds better, I have that instead! Welcome and good luck!
