    Hi Everyone,

    I am brand new to Atkins! I have tried and failed at many diets.
    I'm also type 2 diabetic and hope this program will get my blood sugars under contol.
    Today is day 2 and so far I love it. My only problem is I do not eat lettuce, I have never found a salad that I like. Any suggestions?

      Gee thanks! That's encouraging... Why would I want to eat food that I hate? I'd rather drink water....

        Do you like spinach? If you dress your salad up with enough veggies you might like it. Sometimes when I'm not in the mood for a salad I eat bites of lettuce with whatever meat I'm having.

        There are plenty of veggies on the induction approved list. Surely something there will spark your fancy.

            Hi and welcome to ADBB.

            We follow the 2002 Dr. Atkins New Diet Revolution (DANDR) it would be a helpful for you to have a copy of the book to refer to.             Make a copy of this list http://www.atkinsdietbulletinboard.com/forums/atkins-low-carb-dieting-faqs/6781-what-foods-can-eaten-induction.html and take it with you when you go to the store. If a food isn’t listed on the acceptable food list don’t eat it. Learn to read the label on all foods you buy - don’t just look at the “carb” number look at the ingredients list of everything and check the ingredients against your list. Just because it says "low carb" doesn't mean you can eat it. Also check for hidden sugars (learn the names used in place of the word “sugar”).

            You need to be eating 2 cups of salad greens daily - so it would be wise to try and find something you can eat. You also need to eat 1 cup of veggies of the "other vegetable" list daily. As far as your comment "I'd rather drink water"....you should be drinking a minimum of 64 ounces of PURE water (nothing added) daily. What exercise are you doing? You also need a good multi-vitamin daily.

            The recipe sites are helpful for meal planning – just make sure you use Induction Recipes to begin with.

              I am currently walking on the treadmill and I do drink at least 64 oz. of water a day.
              I was just a little disappointment my very first post and I asked for help, stating that I don't like lettuce. And the first response was "eat it anyway". I was hoping for a few suggestions. Maybe some types of lettuce are tastier than others. I don't know I was just hoping for a much friendlier response.

                Hi Tissle! I wasn't a big lettuce eater at first either. Here is a list of 'salad' veggies that u can have 2 cups a day of. and then following that a list of 1 cup veggies per day.
                Vegetables
                You can have two to three cups per day of:

                alfalfa sprouts
                daikon
                mushrooms
                arugula
                endive
                parsley
                bok choy
                escarole
                peppers
                celery
                fennel
                radicchio
                chicory
                jicama
                radishes
                chives
                lettuce
                romaine lettuce
                cucumber
                moche
                sorrel
                These salad vegetables are high in phytonutrients and provide a good source of fiber.

                Other Vegetables
                You can have one cup per day of these veggies if salad does not exceed two cups. The following vegetables are slightly higher in carbohydrate content than the salad vegetables:

                artichoke
                celery root
                pumpkin
                artichoke hearts
                rhubarb
                asparagus
                chard
                sauerkraut
                bamboo shoots
                collard greens
                scallions
                dandelion
                snow peas
                bean sprouts
                dandelion greens
                spaghetti squash
                beet greens
                eggplant
                spinach
                broccoli
                hearts of palm
                string or wax beans
                broccoli rabe
                kale
                summer squash
                brussels
                kohlrabi
                tomato
                bean sprouts
                leeks
                turnips
                cabbage
                okra
                water chestnuts
                cauliflower
                onion
                zucchini
                If a vegetable, such as spinach or tomato, cooks down significantly, it must be measured raw so as not to underestimate its carb count.


                I suggest take what seems the least offensive to you, hey if you like cucumber, you can have it every day. You might find after awhile that your tastes change and you will actually start craving veggies more frequently. Good luck to you, hope this helps!

                    Just joking. Yup, lettuce can be monotonous. What I discovered after low carbing for a few weeks is that veggies such as lettuce tasted very sweet to me. Have you tried Arugula or fennel? Yup, arugula is a lettuce but it definitely has a lot of flavor. It might be an acquired taste, though. It reminds me of my experience with aged Gouda. To me, arugula is bursting out with many flavors. It is indescribable.

                    OH, by the way, welcome to the forum. Keep us informed how things are going. If you have any serious questions post a new thread. You'll discover there are many moderators and forum members that are very, very knowledgeable.

                        Black olives ARE tasty but they're not salad veggies.

                        Iceberg lettuce can be boring if that's all you have. My favorite lettuce is red-leaf lettuce or other soft, butter types like Boston or Butterhead. They are also good to make little wraps with tuna or chicken salad. Mixing different lettuce types (crisp & soft, mild & peppery) makes for an infinite variety of flavors. I tend to only eat salads during the warm weather and even then I often prefer other veggies either raw with ranch or blue cheese dressing dip or cooked veggies.

                        Here are a few ideas for salad veggies:
                        • My favorite new salad veggie (cooked) is Radish Home Fries. These are pretty weird looking, but really do taste like home fries.
                        • Red, yellow, orange, and/or green bell peppers are tasty raw with dip or sauteed with a bit of onion.
                        • There are all kinds of recipes using jicama.
                        • Celery ribs with cream cheese.
                        • Sauteed mushrooms.
                        • In the cooler weather (or even now) add some escarole to chicken broth (some cooked Italian sausage is a tasty addition) and top with some freshly grated Parmesan cheese.

                        So, you CAN get your salad veggies in even if you don't eat lettuce.

                          I can make a phony hamburger that way, also. What do you suggest for a faux ketchup?

                            Sorry, I'm a Dijon mustard, sauteed mushrooms, swiss cheese on the burger type gal. Heinz 1 Carb Ketchup is now called Heinz Reduced Sugar Ketchup (scroll down to almost the bottom). I think it tastes good. Or you can make your own version but to be honest, I think the Heinz tastes better without the work. Both contain Splenda.

                            ETA: Here's Linda's Even Better Heinz Ketchup recipe. Supposedly it tastes just like the Heinz Reduced Sugar one only not as salty.

                              My diabetes educator told me about this and I've been using it in our home since July of last year. It's better tasting that regular ketchup because you taste the tomato flavor, not the sugar and salt.
