    You 2 are hilarious! Your "little girl" ain't little yet, but she's working on it!!

    All that food sounds so yummy. I don't have much yummy! Carole, you're not too far away and I might have to hire you for a weekend cooking boot camp sometime!! Pancakes. I haven't had those since 2008! Taco salad, I wouldn't know where to begin but it sure would be a welcome treat!! I'm going to study one of the previous posts in this thread and look for ways to prepare an alfredo sauce to compliment the spaghetti squash and shrimp. I can't imagine how good that will be!!

      DH LOVES the way I'm cooking now. He always loved my cooking, but he feels spoiled rotten on Atkins!

        Someone needs to make me go to bed....I'm sitting here so tired my eyes are barely more than little slits for me to look through....I made the mistake of going and looking "at just one more post"....that was an hour ago so I wanted to stop and say goodnight to you both. Hope you both have a wonderful Thursday!!

                Hello, Carole and Sunny_One!! I didn't post too much about the spaghetti squash, shrimp and alfredo sauce last night because I was so tired I felt like I couldn't do it justice!! THIS is how much I enjoyed it. I had it for dinner last night, breakfast this morning and dinner tonight. So, yes, it was wonderful!! I'll have to tweak the amount of water I add at the end though because I think it was still too thick even after I added water a few times. I made the spaghetti squash in the oven which left it incredibly tender and moist but I wonder if it's a different texture if you nuke it. It wasn't nearly as much like noodles as I had hoped it would be but it was great! It's a nice new texture. I think it would even be good with just the alfredo sauce. Reminded me of potatoes. Oh, potatoes!! How they loved to stick to my thighs!

                So, this is strange.... I noticed after breakfast and lunch today I felt awful. I felt light headed, dizzy, out of it and could've easily just fallen asleep right at my desk. It was weird, almost like a reaction to low blood sugar. I struggled to get through the day. I figure my breakfast had 10 carbs roughly. I used one full cup of spaghetti squash, I didn't know what the carb count was but just now looked it up! I had about 6 net carbs for lunch. Maybe I should eat a snack of protein only and try to come back to life!

                I forced myself to plant some flowers when I got home from work. I can't do the exericising I'm used to, so gardening will work. Gardening like I did today is more intense than a walk/jog with the dogs!! Beautiful flowers are now on the way!! I've been buying a few here and there and they've been sitting on the carport waiting for me to put them in the soil. I decided I wasn't going to allow myself to buy another one until I got responsible about the ones I was already neglecting! So, they're in and my everything is sore now!

                  WOW, Everlosing! You DID enjoy it, didn't you! I'm so glad!

                  The spaghetti squash is solid when you cook it. The way you get the "pasta" is to hold half the squash (with a towel or oven mitt), then take a fork and gently scrape the squash out with the ends of the tines. When it comes out, it forms strings that look like pasta.

                  YAY for getting your flowers planted!!! I also worked in a flower bed this evening. I have a large potted hosta in the center, and I planted impatiens in the ground all around it, then worked on the little rock "fence" surrounding it. It's so cute. It's out front under the trees, and our impatien bed is one of my favorite features of our yard.

                  I never eat more than a half cup as a serving. I can't imagine what caused the effects you mentioned. Maybe you have a food allergy to the squash? I sure hope not!
