Still unavoidably unemployed. URG!! This makes 3 months. I HATE THIS!!! The only good thing about it is that I've been able to take this time and focus on my health.
Went to the gym today, despite sore neck, and did 46 minutes of cardio (treadmill and eliptical) which burned an approximate 350 calories. I also did about 40 minutes of weight lifting. My body is certainly feeling it but I promised Hunny that we'd go again tonight to she can work out. Maybe I'll just go easy on the treadmill.
This morning was an Atkin's friendly breakfast of egg salad and some bacon. Lunch was a little over 2 cups of baby spinach with Atkin's friendly tuna/salmon salad on top and no dressing with a few slices of pickles. Snack was 6 pieces of pork rinds with an Atkins friendly crab dip. Dinner is the eggnog shake as we won't be getting home until about 8pm and don't want to be eating at 8:30-9pm at night. We are reducing the amount of whipping cream and substituting ricotta cheese so its more Atkins friendly for our diet (waffling between extended induction and 1st rung of OWL). I bought some whey protein isolate as I read a lot of great stuff about how it helps you increase the protein, is great for people trying to build lean muscle, and it has all of 1 g. of carb per serving (scoop). So, with my morning coffee this morning I'm probably getting about 18 grams of carbs. I like the idea of getting more dairy into my diet as well since osteoporosis is such a big issue in my family and I never did eat a lot of dairy (ice cream the exception) when I was younger.
I want to get more veggies in my diet but really like the simplicity of what I've been eating. Perhaps I'll nix the bacon at breakfast and add broccolli instead. Or maybe instead of the occasional pork rind I'll buy some zucchini. I know I'm getting a squeak over 2 cups of veggies a day, which is more than most but it just doesn't seem enough. Can't wait until I'm at the "adding fruit" period of the diet.
