    I send you two Greek recipes that you can use and in induction phase. If you don’t eat yogurt in this phase, the book said that we can eat it but maybe is problem for some people, just live the tzatziki for OWL.



    OCTOPUS BOILED WITH VINEGAR



    Octopus roughly 1kg (frozen or fresh), cut in small pieces roughly 4 cm.



    1/4 glass of vinegar.



    1 tsp of rubbed Oregano.



    We put the octopus in a saucepan, without water. We cover it and leave it to boil in low fire. As soon as it takes the first boil we throw the vinegar and we leave it boils until to be soft.

    We serve with rubbed oregano and olive oil.



    It is accompanied nice with vegetables, particular with radishes and cauliflower. You can eat it like a main dish or appetizer.





    Another option: Don’t cut the octopus in small pieces but in bigger. After the boiling we put it in grill for about 10 minutes and we serve with the same way (olive oil and oregano).

    Is more gristle with this way.



    1 serves about 1 cup: 5 carbs





    TZATZIKI (sause for meets)



    1 cup of yogurt

    ½ cup cucumber peeled and shredded

    2 cloves of garlic crushed

    2 tsp vinegar

    ¼ cup olive oil

    ½ teaspoon dill sead.

    salt and pepper to taste



    -Place yogurt and cucumber in a cheese cloth to remove water

    -Mix all ingredients in a bowl

    -Garnish with olives (optional)

    This sause is very nice with baked meets, all meets.

    Tips: Don’t eat these sause when you are ready to go for a date.



    1 serve about 2 tablespoon: 3 carbs

    your book says you can have yogurt in induction?
    yougurt is a fresh dairy product and should be saved for OWL rung 2. we can have sour cream but that is not yogurt. the translator makes it come out sour custard so I can't tell you it in greek sorry. but sour cream is made from cream inoculated with bacteria and yougurt is whole milk innoculated with bacteria. cream is allowed on induction milk isn't



    what does gristle mean? is this grilled octopus chewier maybe?

    τι gristle σημαίνει; είναι αυτό το ψημένο στη σχάρα χταπόδι πιό λαστιχωτό ίσως;

    I translated it to greek and then back to english and it still means what i wanted to say

      2big, you have right about yogurt. In my book New revolution Atkins diet, said that maybe you can eat some yogurt about 30gr even in induction but is better to avoid it. (chapter 11, page 168, SPECIAL FOODS)

      I didn't eat yogurt in anyway because I didn't like me so much exept this sause. But I didn't use in induction.

      I am try to find a better word about gristle (the right is gristly, I didn't write correctly) in Greek language call "tragano".
      I
      s something like the hard-baked maybe.
      I don't know if I help you with this.
      Unfortunately the different language is a little problem, I can understand everything that you said all of you, but is very difficult to write correctly.
      My opinion is better to don't baked because I like me more just boiled.

        ours says sour cream, and cream in the speical catagory foods of chapter 11. is your book DR ATKINS NEW DIET REVOLUTION the 2002 copyright?

        thanks ofr the clarification on the gristle in english that is a part of the meat that is connective tissue and very hard to chew up. Most folk trim it off and toss it in the stock pot.

          Thanks Anda, I am going to try the Octopus. Octopus is very tough, and chewy, maybe thats what your thinking about.

            I love octopus! Thanks for the recipes Anda! I bet the second one would work just fine with sour cream instead of the yogurt.

              I make Tadziki using sour cream instead of plain yogurt. I just grate a remove the seeds of a cucumber, grate it, squeeze out the water and add 1 clove of garlic, and some sour cream, salt and pepper. It makes for a very good substitute.
