  • Sausage Stuffed Mushrooms

    This is an easy recipe that I have used for years. It tastes great and works for induction in small quantities.

    Kristen's Stuffed Mushrooms
    12 large mushrooms
    1 pkg 12 oz. Jimmy Dean Sausage (any kind, but no added sugars)
    1 pkg 8 oz. Cream Cheese (usually use 2 pkgs but for Atkins, use one)
    1/2 tsp garlic salt
    Spring of Rosemary (or 1 tsp dried rosemary)

    -Fry sausage in pan and set aside to cool
    -Take stems off mushroom, wash and dry on a paper towel
    -Mix cream cheese, salt and rosemary in a separate bowl
    -Fold sausage into mixture (if you want it creamier, just use 1/2 sausage)
    -Stuff the mushrooms
    -Bake at 350 for 20 minutes or until cream cheese is soft

    Enjoy!

    Sorry- the 1/2 tsp of garlic salt should be 1/2 tsp of garlic powder! I apologize!

      YUM! Just rediscovered stuffed mushrooms last week and I can't get enough!
      I have made the recipe (mine is almost exactly like yours ) with bacon bits or ham instead of the sausage as well. Sometimes I'll top with a small square or grate some ementhaller (sp) swiss cheese on top. Oh, and I usually chop up and add some of the mushroom stems as well. Last week, I also added a dash (prob. btwn 1/8 and 1/4 tsp) of onion powder and that was yummy!
      Served these at a dinner and got all sorts of rave reviews!
      Ahhh to be called a 'LOSER'!!
