  • Steamed Artichokes with Roasted Red Bell Pepper Sauce

    This is my new favorite summertime app:

    1-2 artichokes, whole
    1 lemon slice (optional)
    1/4 cup red bell pepper, diced
    2 T minced garlic (I like garlic, you can use less)
    2 T olive oil
    1/4 cup mayo
    4 T sour cream
    garlic salt, pepper, and cayanne pepper to taste

    Steam artichokes for approximately 45 min in 1" of boiling water with lemon. Saute red bell pepper and garlic in olive oil until bell pepper is somewhat soft. In a small bowl, mix mayo and sour cream together, add bell pepper mix (including any leftover olive oil), season with garlic salt, pepper and cayanne pepper. I sometimes add more sour cream if mayo is too overpowering. If you like spicy, the CAYANNE is the kicker--I like a lot. Also, if your grill is already fired up,you can stick the artichokes on for about 10 minutes after they've steamed to char the outside a bit and add more flavor.

    Sounds really good..

    My favorite artichoke recipe is simpler..

    Cut them in 1/2 length wise. Steam them. Take out center flower. Then turn cut side down on the BBQ grill and grill until they have nice grill marks and a little smoky flavor. Then serve with browned butter and coarsely ground salt. Dip leaves in butter and then salt... delicious!
