large pepperoni rounds (usually available by the packaged salami)
low carb pizza sauce
shredded mozzarella cheese
parmesan cheese
finely diced red onion
first you broil the pepperoni rounds until before they just start to crisp up. take out of oven put on sauce, then mozzarella, parmesan and lastly the red onion. put back under the broiler until cheese is melted and bubbly. these little pizzas are so delicious. the only carbs are in the pizza sauce and the onion, which you can control the amout you use. enjoy!
when i made these, i realized it was the flavors i was missing, not the crust. so, i came up with this very satisifing recipe and also have another take on it as a sandwich. you take the large pepperoni, put a mixture of mayo and mustard along with thinly sliced pickle and red onion with black pepper, roll up or fold and eat. these little guys are delicious!
