    I have had the *real thing* and these are great!! However, I believe that that recipe could be modified in several ways to make it Atkins friendly. I am not at the point where I can spare carbs or eat whole grains to try any modified recipes... so if anyone wants to try making this and letting me know if it's any good... let me know! I do plan on making these someday.

    ORIGINAL RECIPE... NOT ATKINS FRIENDLY
    Oatmeal Jam Bars


    Ingredients Amount
    Oatmeal 2 1/3 C
    Flour 1 ¾ C
    Butter, softened ½ lb. (2 sticks)
    Brown Sugar, firmly packed 1 1/8 C
    Walnuts, chopped fine ½ C
    Cinnamon 1 ½ tsp
    Salt ¾ tsp
    Baking Soda ½ tsp
    Preserves 1 ½ C
    (Raspberry, blackberry, marion berry, strawberry, etc… your choice)

    9”x13” pan.

    Production Method
    1. Preheat oven to 325 F.
    2. Combine dry ingredients (oatmeal through baking soda, flour, brown sugar, walnuts, cinnamon, salt, and butter) in a mixing bowl on low speed until the mixture is well blended and mealy or crumbly.
    3. Remove approximately 1/3 of the crumb mixture and save for the topping.
    4. Spread the rest of the crust mixture into each well greased 9”x13” pan.
    5. Spread preserves over the crust.
    6. Top the preserves with the remaining crumb mixture.
    7. Bake in oven for 30 to 40 minutes or until golden brown.
    8. Cut into equal portioned bars.

    POSSIBLE ATKINS FRIENDLY

    Oatmeal 2 1/3 C
    Whole wheat flour or Atkins
    Bake Mix, etc. 1 ¾ C
    Butter, softened ½ lb. (2 sticks)
    Brown Sugar Substitute 1 1/8 C
    Walnuts, chopped fine ½ C
    Cinnamon 1 ½ tsp
    Salt ¾ tsp
    Baking soda ½ tsp
    Low-carb/sugar free
    preserves 1 ½ C


    Follow the same production method.


    Lemme know how it goes!!! I am REALLY curious.

    If you want, you could try cutting this recipe in half and putting it in a smaller pan... then there wouldn't be a huge panful of it.
