    I have a recipe here for low carb marshmallows, my husband has be naggin me to try it out for a while now. But I am confused about something in the recipe. You have 3 egg white in it and they never get cooked, are you supposed to eat raw egg white?! Has anybody tried this yet?


    Ingredients:
    3 envelopes unflavored gelatin
    5 Tablespoons Splenda®
    3 egg whites
    2 teaspoons vanilla extract
    1/4 cup cold water
    3/4 cup boiling water
    1/2 teaspoon marshmallow flavored oil [optional]
    (LorAnn or American Spice)

    Sprinkle gelatin over cold water in a mixing bowl. Set aside for 5 minutes to soften. Add to boiling water in saucepan; cook and stir until gelatin is dissolved. Remove from heat. Cool to consistency of thick syrup. Stir in Splenda® and vanilla (and marshmallow flavored oil if using.) Beat egg whites till soft peaks begin to form. Very slowly, trickle a small stream of gelatin mixture into egg white, beating until all gelatin is mixed in. Continue beating until light and fluffy (but not until they're dry.)

    If you're making marshmallow crème, pour into a jar (jelly jar, peanut butter jar, etc.) and refrigerate. If making marshmallows, continue...

    For Mini marshmallows -- Pour into greased and floured pan, cool to set, and cut into size desired.

    5 carbs in entire recipe for marshmallow crème.

    Raw eggs go into some other dishes, such as caesar salad dressing, and occasionally into protein shakes and etc. I'm sure back in your high-carb days there were times when you licked the spoon when mixing batter than contained raw eggs as well .

    However, there is a risk of food poisoning, whether or not you choose to take that risk is up to you. For what its worth every reported case of salmonella in the U.S. from eggs has come from a restaurant/hotel or some other place where the eggs likely sit out all day before being cooked. Using fresh eggs that have been kept refridgerated and keeping the end result refridgerated would lead to a next to nil risk.

      For Mini marshmallows -- Pour into greased and floured pan,
      Merangue is uncooked egg whites. You can purchase pasturized eggs to use for raw egg recipes or you can try egg white powder.

      Also, if you make the mini version, find something to use other than flour... perhaps cocoa powder.

        This sounds wonderful. The coco powder to replace flouring the pan sounds like a great idea. Think I'll try half with unsweetened cocoa and half with unsweetened coconut. :P

          Tonight is my second batch of marshmallows. Adding one ounce of unsweetened coconut only adds 2 carbs to the recipe. Adding one tablespoon of unsweetened cocoa only adds 1 carb to the recipe.

          This is really a fantastically good recipe! :yes There are so many variations you can try by adding your favorite chopped nuts, swirling in melted chocolate or melted peanut butter. Rolling squares in toasted coconut. Adding cinnamon or using flavored splenda sirups, etc. etc.
