    I thought some of you might like my latest 'party' cakes that I take along when visiting someone for tea and nibbles.


    Recipe (makes 12 hearts that are sandwiched with sweetened cream cheese to make 6 buns.)
    1 ounce melted butter
    1/2 cup ground almonds
    1 tsp baking powder
    2 Tablespoons Davinci syrup (I use vanilla or almond flavour)
    4 Tablespoons water

    Mix till smooth batter-like consistency

    Spoon into microwaveable heart-shaped chocolate mould - about 1/4-1/3 inch's worth of batter. Or make them in a muffin mould instead.
    Using the mould I have I do 3 batches of 4 at a time.

    Microwave for 2-3 minutes per batch for a spongey texture.
    If you overcook them you end up with a slightly smaller crunchy bun which is still nice.(don't ask why I know that!!)

    While they cool I mix up cream cheese with some more Davinci syrup and chill it. Then stick two at a time together (top of each heart outwards) with a dollop of the 'cream'. If you like you can use whipped cream and sliced strawberries instead!

    According to fitday.com the whole recipe is
    cals - 627
    fat - 68
    carbs - 12 less fibre - 6 = 6 net carbs
    prot - 21

    Plus whatever counts for the 'filling'.

    Thanks Elizellen for the recipe! I would love to try these but, unfortunately, I don't have a microwave. Is it possible to cook the batter in the oven and for how long?

            These look great! I have almond flour but not ground almonds, do you think that would work just as well?

              Almond flour = ground almonds. Same thing. Possibly "almond flour" designates a finer grind, but that can be hard to achieve without adding additional dry powder to the mix. Otherwise you tend to get nut butter.

              On higher rungs you can add soy or whey protein powder, Atkins bake mix, WPI or other "fake flours" to the almonds when they are coarsely ground in order to get a finer grind without turning the whole thing to marzipan paste.

                  Well holy Banned from Argo. Somebody who has a line from a filksong in their .sig. That's very cool! Tom Smith is good fun to listen to, I've heard him live at many a con.

                    AWESOME recipe!! I am going to be making these so I can have a treat on my sons first b-day!!!

                    I was searching for something tasty to have, and this is it!! Thanks so much for being so creative!!!

                    Oh yea, do I have to use any almonds? I am only on induction...I am going to make them either way b/c I will get cake if I don't! LOL

                      Steph, since you aren't in your very first 2 weeks, a lot of people agree you can have nuts on induction....since Dr. A said "no nuts or seeds in the first 2 weeks". I think it would be ok for a one time thing. I find Da Vinci syrups at Walmart and at TJ Maxx, if you have one of those near you.

                        I don't really like nuts...but I don't knnow SQUAT about cooking, so I didn't know itf it would mess with the consistancy or something.

                          Almond flour doesn't really taste too nutty to me....I like it in dessert type cooking because of the texture. I think the Da Vinci syrup or an extract would cover the flavor pretty nicely. It has a texture a lot like really fine cornmeal...it's not quite as fine as a real flour, but it doesn't make the consistency weird or anything. I like it a lot!

                              The only place I've found DaVinci syrups is the Border's here. Almond flour is not nutty at all, at least the kind that I use.
