    Ricotta Dessert

    I tried this last night- It was great!!


    1/4 c. Ricotta Cheese
    1 tsp. Vanilla

    Blend together and enjoy!

    180 cal/3 c.

    Trying on Pancakes

    My husband cooks great locarb pancakes :P and bacon on Sunday morning, but I am not a syrup fan . I finally found a recipe for 1/2 Cream cheese and 1/2 Strawberry jam w/splenda, but now I am going to also try the sweetened Ricotta cheese .

      That's funny - I'd just invented my own recipe and thought I'd check to see if anyone else had posted it ....... as it's so similar to the ricotta one, I won't start a new thread!

      Mascarpone from cheese allowance
      Vanilla extract to taste
      Splenda/sweetener to taste if desired

      Mix and eat

      The taste reminds me of really rich Italian icecream or panecotta. I found I didn't need any sweetener, just the vanilla. I've tried this with extra thick cream [don't stir too much with extra thick cream as it thins it, just fold in the flavouring], but I think the mascarpone works better.

      I will have to give the ricotta version a try too!

        I have had a similar version as well. It had mixed equal parts of whipped cream (sweetened with splenda and vanilla) and ricotta and then a little decaf espresso swirled through it. Sort of like tirimisu.

            ricotta is also delicious with about 1/2 packet of splenda for 1/4 cup of ricotta. mmmmmm.

              Add a tbsp of cocoa powder and this makes an amazing chocolate cream. I have some every day!
