    Basic recipe will work for most types of meat.

    in a roasting pan place 1 onion chopped, 1-2 stalks celery, 2 cloces garlic, and 1 spring fresh rosemary.

    On this place your roast. add about 1" of water to pan. place uncovered under broiler at 500 F for 30 minutes. Reset oven to 275 F and cover roast. Cook until tender about 1-5 hours depending on how well you like your cooked and the size of the roast.

    remove from roaster and let cool 30 minutes before cutting. reduce liquid by simmering to produce a "gravy" you may choose to eat the veggies or not. unfortunately i don't have a carb count for the "gravy" or veggies.
