Like Whinnie the Pooh I was in need if "just a little something", so I made a chocolate flax muffin in my usual way but added a splash of double cream - what a difference it made to the texture. I will be doing that again, but not too often, I hope.
Naughty recipe:
Muffin
Into coffee grinder:
2 tablespoon flax seeds
2 tablespoon protein powder (as used by body builders)
2 tablespoon unsweetened cocoa
0.25 teaspoon baking powder
wizz up
Into bowl:
1 egg
2 tablespoon cooking grade olive oil
2 tablespoon UK double cream (a little richer than US Heavy Cream)
1.5 teaspoon liquid Hermesetas (sacharin, only liquid sweetener available in UK)
add dry mix to bowl
whisk with fork adding water to thin batter
turn into greased plastic bowl
microwave - 2.5 mins at 1000w for me.
Filling:
Lindt 85% dark chocholate melted into double cream and butter.
Someone else can do the maths - not too many carbs, but the calories . . .

BUT don't eat it all at once - one quarter of the mix will be quite enough!
