    Hello,

    I opened a can of pumpkin yesterday and I still have some left, so this morning I decided to be a little experimental and come up with a new recipe for breakfast. Also, I'm staying at my dad's house today, and he has a ~microwave~, a piece of technology I have not had access to in months, so it obviously had to come into play. Anyways, I hope you like it!

    Ingredients:

    1 extra large egg, whisked very well
    2 tablespoons of canned pumpkin
    3/4 tablespoon of butter
    3 dashes of cinnamon
    3 dashes of splenda
    1 dash of allspice
    1 or 2 drops of vanilla extract

    Directions:

    Whisk the egg in a bowl. Add a few drops of water, the vanilla extract, a dash of cinnamon, a dash of allspice and a dash or two of splenda. Whisk again until all of the ingredients are well incorporated.

    In a small microwave-safe bowl, combine the canned pumpkin with a little cinnamon and splenda. Mix well. Add the egg mixture to the pumpkin and whisk again until the ingredients become homogenized.

    Place the butter in a smaller microwave safe bowl with a little more splenda and cinnamon.

    Microwave the egg and pumpkin mixture for two minutes. At the end, the concoction should be very fluffy, almost like a custard, or something. Something fluffy. While it cools for a moment, microwave the butter and then pour it on top.

    Enjoy!

    Notes:

    I used the word 'dash' instead of giving exact measurements because, well, your tastes are most likely different from mine. If you are on induction you need to watch your splenda intake! When I made this, it wasn't very sweet, but I try to avoid sweets because they make me feel hungry most of the time. Increasing the amount of cinnamon or something is probably better for you than increasing the splenda. Stevia or something else of that nature would work also work fine.

    I added crushed walnuts to mine, but you probably shouldn't do that unless you eat walnuts.

    I don't see why this recipe couldn't be doubled or even tripled, but I generally prefer to get my carbs later in the day, so if you decide to try that you might want to cut back on the pumpkin and add cream cheese somehow. Again, watch the splenda!

    Sounds delish, similar to the mock danish but using pumpkin rather than cream cheese. Will have to try it when I can remember to buy some canned pumpkin.

      I've done something close to this little number in the microwave a bunch of times using different ratios and it always comes out great!

        I really want a sweet type muffin thing. This sounds good, but I'm wondering if it could be tweaked a little using whey protein, and baked in smaller muffin tins in a regular oven.

        Have you tried using a regular oven with this kind of recipe? Would the "muffins" keep in a fridge and heat up okay?

          Okay, I'm talking to myself. I tried the pumpkin thing using the whey protein, flax seeds, and splenda. I mixed it up and baked it in a regular oven in muffin tins. They came out just like little cupcakes/muffins. They look really good - kind of a crispy crust like real muffins. I decided not to eat any until after I've refrigerated them to see how they are, but they look promising.

          Here's what I did:
          1/2 cup pumpkin
          4 eggs
          4 tablespoons flax seeds
          1 scoop whey protein powder (unflavored)
          1/4 cup Splenda
          1/2 teaspoon pumpkin pie spice
          1/2 teaspoon vanilla
          dash salt

          Counting the splenda as .5g carbs per teaspoon, the counts come out like this from fitday:

          Whole batch: 464 calories, 23g fat, 36g carbs - 17g fiber = 19g net carbs, and 36g protein.

          I made 6 muffins out of this, so counts for each muffin are:
          77.5 calories, <4g fat, 3.2g net carbs, and 6g protein

              They were great. They were just like individual pumpkin breads. Really moist.

                Hmm... the bready pumpkin stuff is an interesting idea; I'll have to try that...


                I've been using the microwave pumpkin/cream/egg/splenda mixture as a sub for my old favorite of microwave instant oatmeal -- works like a charm for that.

                I also had an old softspot for carrot cake/cream cheese muffins... this would be a great sub for that.... could make the pumpkin muffins and have with cream cheese frosting.

                  I just made this and added a teaspoon of cream cheese. OMG it was soooooo good.

                    They keep in the fridge, too. I made mine on Monday, and it's now Thursday. I've been eating one each morning with breakfast. I spread some cream cheese on it, and mmmmm! I'm sure glad I tried these. They would be good with the cream cheese sweetened, if you can afford the sweetener, and have cupcakes, but I just use plain cream cheese.

                        I'm not really sure, about 20 minutes maybe. I just used a toothipck to test the center, and when it came out clean, I removed them. They were nicely golden brown.
