    Paula Deen's Magical Peanut Butter Cookies



    I got this recipe off another low-carb board, tweaked a few things a little and now I present it to you fine ADBB folks!

    Ingredients

    1 cup of peanut butter
    1 & 1/3 cup of granulated Splenda
    1 egg
    1 tsp vanilla

    Preheat oven to 375 degrees. Grease baking sheet (I used cooking spray) or line baking sheet with parchment paper. Mix all ingredients in a bowl. Drop spoonfuls onto baking sheet. Bake for 10-13 minutes.

    The size that I do my "spoonfuls," this recipe makes 15 cookies.

    I bake mine for 10 minutes because I like my cookies a little underdone, and I hear that if you overcook this recipe, the cookies get really brittle. These are amazing, easy, and you would never know that they didn't have flour in them! I find them a great way to portion control my peanut butter, as each cookie has a little 1.06 tablespoon of peanut butter in it (if you make them the same size that I do). I find it tough to eat just a tablespoon or two of the peanut butter if I'm dipping into the jar, but I can easily stop at one or two cookies if I'm making these.

    The entire recipe has 50 carbs, 15 of them fiber, excluding the sweetener carbs (because I know invariably some will use packets, some will use liquid, some will use other sweeteners--and there are about 18 million ways that I've found that people count their Splenda carbs), and 1605 calories, so not counting the sweetener carbs, that's 106 calories, 3.3 carbs, 1g of it fiber per cookie before the sweetener carbs are added.

    Changin, are these a chewy kinda cookie then, if baked for 10 minutes? Did you use that much splenda? I tend to use less Splenda that is called for anymore. I guess my tastebuds have adjusted to needing less sweetner. I'm gonna have to give these a try for DS. (I am not a peanut butter person, PB - blech!) But he is all into protein and such these days so this might be a good treat for him!

      Oh yeah, I'd say they were chewy, rather than crispy. I used the amount in the recipe but could have gotten away with a little less, though these didn't taste sicky-sweet to me -- however, my husband would probably put even more into these so I wasn't able to experiment with the Splenda level much (or I'd end up having to eat eventually the whole batch myself, something I don't want to do regardless of how good these are!).

      I bet your DS will like them. The thing I liked the best is how these ingredients are ones that I have around all the time anyway. Makes me wonder why high-carbers even bother putting flour into usual peanut butter cookie recipes anyway.

          Thanks for sharing that recipe! Sounds super simple! I'm with Barb though I would definatley not be able to eat them if I put that much splenda in them. I find that I normally use about 1/2 of what a recipe calls for! I can't wait to try these. Did you use smooth or cruchy peanut butter? I bet either one would be good!

            I've only used the creamy stuff, but I bet crunchy would be great!

              will liquid sweetner work in this? or does the sweetner carbs act a a bulking agent like real sugar does?

              can you just bake plan PB and have nut chips?

                What about using Low Carb peanut butter...will that work? Did you use natural peanut butter?

                    I think you'll need to use a powdered sweetner for this 2Big. This is really similar to a flourless peanutbutter cookie I used to make in my pre-Atkins days. You had to use the recommended amount of sugar because there was no flour, so the sugar had to caramelize in order to hold the cookie together. If you used less than 3/4 of the sugar amount, the cookie wouldn't hold together and would be like trying to eat fine sand. The recipe I use to use was really easy: 1 cup peanutbutter, 1 cup sugar, 1 egg.

                    I tried to low carb that recipe before using 1 cup of the granular Splenda. The cookie looked great...until you picked it up, then it crumbled into sandy bits.

                    So I'm thinking that extra 1/3 cup of granular Splenda is needed, not for it's sweetening effect but for the bulking agents to help hold the cookie together.

                      LOL, wow, you guys had a lot of questions! I was chased out of my apartment by a near-fire yesterday, so I've got a lot of catching up to do.

                      I think lc peanut butter would work, yeah. I used processed store-brand crap because I had a bunch that had been way marked down (I know, I know; I'm not perfect).

                      I think that not2late's right about the bulking agents being required, but I haven't tried the recipe with liquid sweeteners... adding nut or sf choco chips is a great idea though! I'm going to put walnuts in mine the next time I make it because I think it would be great extra-nutty with an added crunch. Also, I bet this would be good with other kinds of nut butters; I know a lot of people around here are into almond and macadamia (though they can be expensive and this recipe uses a lot, I know).

                      I'm a peanut butter addict too! These are great because they give me that PB "fix" with only about a tbsp at a time.

                        I am soooo trying this with some LC PB. I get my PB fix now by having some Peanut Butter Paradise LC Ice Cream...it's the best!

                            Yep... I used the natural no sugar added PB. You do need to use all the Splenda or they just crumble.
                            and.......... no spikes for Mr. B. with this one! He was thrilled to have cookies again.

                              Tried these tonight. I did use all the splenda they called for. Although my daughter and niece burned them they were a nice treat. Won't hesitate to make them again.
