  • Halvah a la Sarah

I saw Sarah's low-carb halvah and decided to try my own. I was going more for taste than consistency. i used 2 tbs of tahini, 1 splenda packet, a dash of cinnamon, 1/4 tsp almond extract, and I threw in 2 tbs of flaxmeal to thicken it up. If you use protein powder or almond flour, etc, you'll get a better consistency than the flax, but i just wanted it to taste good, and it did.

I think I'm liking sesame more than peanut! I need to get my hands on protein powder and the nut flours.

                Re: Halvah a la Sarah

Yup, that's where i started. I've been making one serving at a time, so I go with 1 and 1/2 tbs to 2 tbs of tahini. I don't have any protein or nut flour so i added 2 tbs flaxmeal to it. As you mix it, the flax soaks up more tahini, so it ends up kind of crumbly. I mixed in 1/4 tsp each vanilla and almond extract, 1 splenda packet, and sprinkled cinnamon on top.You could press it or make a ball and refridgerate it to firm up, but i just eat it with a little spoon right away.
                These are estimates
                fat 23
                carb 12.5
                fiber 7.5
                net carb 5
                protein 7.5

                  Re: Halvah a la Sarah

Liquid, as long as you use enough of it, hydrates/seizes the tahini and makes it firm/cohesive. 1/2 t. extract is probably enough to seize 2 T. tahini, but I think the flax meal might be throwing a wrench in the program. Unless you like it crumbly, you might want to re-think the flax.

Actually, I've been seeing some discusion regarding baked halvah. If you included enough liquid to hydrate the tahini and the flax meal (or maybe just hydrating the flax meal first) you could try baking it. Might be interesting.

Depending on where you live, sugar free halvah is available. I bought a jar at a Syrian grocer in Patterson. It was pretty good but it did have an obscene amount of sugar alcohols in it. I don't do SAs all the time, but when I do consume them, I don't normally have a problem.

I have what looks to be an authentic egg white/boiled sugar syrup halvah recipe that at some point I'm going to convert to a polyd/erythritol syrup.

                    Re: Halvah a la Sarah

I try to incorporate flax into my menu a few times a week so I figured why not, but I prefer it with just the tahini, some extract and a small amount of splenda. It firms up enough for me. I think if I used slightly more liquid it would firm up into a more traditional consistency, but I like it to have a mild flavor. I likeit no matter how, lol.
