  • one-minute, one-serving, one-cup chocolate cake

    one-minute, one-serving, one-cup chocolate cake

    dry:
    1 TBS cocoa powder
    1 TBS coconut flour
    1/4 teaspoon baking powder
    pinch salt
    2 packets Splenda

    wet:
    1 egg
    1 TBS cream

    Mix the dry ingredients well. Add the wet ingredients. Mix thoroughly and microwave for one minute.

    Slow Burn by Fred Hahn
    raquetball
    hockey
    inline skating

      What is coconut flour? I havent come across that ever.

          Sounds devine! I wish our local natural stores carried coconut flour...they don't keep it in stock.

            wonder what would happen if you put unsweetened flaked coconut in the food processor or coffee grinder and ground it up to use in this?

                Oh my... now there's an idea... seems like this calls for a little experiment.

                I bet coconut flour cakes would be extra-nummy!

                  I've done it with almond meal as well, but I remember it was a bit more course and affected the texture, but it still works.

                  Here's a link to it from Netrition: Coconut flour

                  It's very fine, much more so than other nut meals, powdery, like flour. I don't think you could make an equivalent flour at home. You'd have to feel the texture to know what I mean.

                  Also, if you have sugar alcohols or glycerin around, replacing one teaspoon with a packet of Splenda really makes a difference in the taste - mixing sweeteners always gives things a more natural taste.

                  I think it tastes great. We made a coffee icecream yesterday and I folded in chunks of the microwave cake - all of my guests loved it and couldn't believe I had made the cake bits without flour.

                    I put dried unsweetened coconut in the coffee grinder ..it worked fine and is much cheaper than the flour ..just a a tip

                      do you think if we freeze the cococnut first to help it get drier will it grind better

                        Is your coconut abit moist, 2Big? I have a bag of unsweetened dried shredded coconut and that stuff is pretty dry!

                          I made this last weekend and it was very tasty. *drool* I also concocted a low carb frosting to go on it.

                          1 T unsweetened cocoa powder
                          1 T unsalted butter, room temp
                          1 T DaVinci syrup (I used vanilla)
                          1 T almond butter (peanut butter or any nut butter would work just as well...this gives the frosting body. If you want to cut the carb count further you could use 1/2 T....)

                          Whisk cocoa, butter and syrup until well blended. Add almond butter and mix thoroughly.

                          I plugged the numbers into fitday and it came out to be 4 net carbs.....I didn't count the syrup, but I know some do....if so I think 1 oz is a serving (1 carb) and my recipe only uses half of that, so......

                            OK, this recipe is totally amazing.

                            I made it using the new Hershey's Extra Dark cocoa, which gave me a rich, devil's food-like cake. And I mean real cake.

                            I easily found coconut flour at my local health food store for $6.99 a lb. (Bob's Red Mill brand). This flour has some intriguing qualities...it absorbs liquids like crazy...and has very low carbs. I think I'll be experimenting quite a bit with this. Definitely worth the investment.

                            In fact, that one tablespoon of coconut flour in the recipe is so absorbent that the cake came out a bit dry. Next time I'll skimp a little on the flour, or maybe add a little cream cheese-vanilla-splenda icing.

                            Thanks SO much for posting this, vJosie! This is the first cake I've had since starting Atkins three years ago, and it totally rocks!

                              Oh girl!!! Yummy!!!!!! I am a huge coconut fan, but I am having a hard time here in Mich even finding the unseetened flaked. I will never find the flour. Thanks for the link and the recipe!
