  • Cappuccino Custard

I found this on the back of the Soy Slender box, NOT safe for induction. BTW, if you haven't tried Soy Slender, it is SO GOOD and only 1 carb per serving, since it is sweetened with Splenda. My favorite milk substitute.

    CAPPUCCINO CUSTARD (makes 4 servings)

32 oz Soy Slender Cappuccino flavor (one box)
    3 tbsp unflavored powdered gelatin
    1/2 tsp nutmeg

Whisk together first 2 ingredients in a saucepan. Over medium heat, stir mixture and bring to a boil. Simmer until gelatin dissolves, uncovered, whisking occasionally. Turn off heat and pour into individual cups. Sprinkle with nutmeg. Refrigerate, covered with wax paper, until set.

This was really good and a nice treat. I used the Chocolate flavor instead of the Cappuccino, and it tastes just like you'd imagine chocolate jell-o would taste. Not bad, but kind of odd. TRY IT if you can get Soy Slender in your area, I found it at Kroger in the health food section.
