  • More on Cream Cheese Jelly (Jello)

    There was a thread running a while ago in which Chris said he whipped some cream and folded it into the mixture. This I always do now, but I was finding the sugar free jellies too sweet and the taste too juvenile.

    I now use gelatine, flavour with a teaspoon or two of vannilla essence or a teaspoon of lemon essence and a teaspoon of lemon juice. I sweaten the mix with two teaspoons of Liquid Hermesetas, which is the only liquid sweetener available in UK.

    So:

    4 or 5 fl oz double or heavy cream - beat and set to one side.

    7 or 8 oz cream cheese, slightly warmed
    1 packet gellatine in half a cup of hot water.
    1 teaspoon vanilla essence
    or 1 teaspoon lemon essence and one teaspoon lemon juice.
    2 teaspoon Liquid Heresetas (or equivalent)

    beat together
    fold in whipped cream

    leave to set in fridge

    I eat this as cheesecake with a few frozen berries on top.

    Unlike granular Splenda, Liquid Hermesetas has no calorific overhead, so this version has the same low carb content as that made with the sugar free jelly.



    In UK Hermesetas Liquid is only available from independent chemists - and they have to order it - it will arrive from the wholesaler in a few days. Boots does not stock it..

    - Sweeteners: Cyclamate and Sodium Saccharin
    - 10 drops (0,5 ml) sweetens as much as 1 teaspoon (5 g) sugar
    - Suitable for diabetics if fitted into normal daily allowance
    - Zero calories

    - Can be used for cooking and baking
