  • Lemon Cheesecake-ish

Okay, so I found this recipe online for this lemon cheesecake tasting, wonderfully nice texture, let me over-indule myself, dessert.

    Here ya go...

1~small box of sugar free lemon jello (if you are crafty you can make your own)
    1~cup boiling water
2~8 oz. packages of cream cheese softened
    2~tablespoons of lemon juice

    Directions:

Mix jello with boiling water until well dissolved. Add both packages of cream cheese. Mix well until no lumps are visible. Add the lemon juice. You got it! Keep on mixing. Once all is well mixed, pour into an 8"x8" and place in the fridge until set.

This is a very yummy dessert! Not too many carbs in it either! The website also said that you can use strawberry flavored (or any other flavor) jello and then add fresh fruit to it. I added a little whip cream to mine and it was delish. Hope you enjoy...

      Hi Angeleieze,
I was wondering how many servings you get from your recipe?

Just in case any newbies read this, I just thought I should mention that I keyed it into fitday and whilst I don't know how many tablespoons of artificially sweetened gelatine that a package of Jello would be - I assumed 4 tablespoons (80g) It might be more?
It works out at very nearly 30 carbs, with over 1600 calories & it is definitely 4 whole days worth of cheese allowance if someone isn't up to the dairy rung in OWL and also with only a 3 serve sweetner allowance per day be very careful to count that too.

      Plus whipped cream carbs
plus any other additional flavourings carbs

Just in case anyone didn't know

sweetgirl~The recipe called for 8 huge servings, but I ended up with 16 more realistic size ones. My total recipe count came to 31, which is about 2 carbs (1 cheese ) per serving.

Keep in mind, for the newbies of course, that this dessert is not to be considered to be consumed by one indvidual in one setting, so for a luncheon or dinner with friends this is a very nice dessert.

CJB~ I love me some tacos (minus the shell of course)!

'cause I was wondering about your "over-indulge myself. Not too many carbs" intro.

              Re: Lemon Cheesecake-ish

What I meant was that it is good enough to over indulge without the thought of 12 carbs per serving. It only has two per serving so if you eat three, then you won't kick yourself later for it. Plus, really for the whole recipe (which is pretty large if you haven't made it) 31 is not too many carbs.

                      Re: Lemon Cheesecake-ish

This is not technically safe for induction because sugar free jello contains aspartame.

Here are the rules of induction:

Also keep in mind that you are only allowed 3-4 ounces of cheese per day so make sure your portion does not exceed that amount.
