I wanted to come up with and share a "natural" jello and I think I've hit it. I buy Ocean Spray Lite cranberry/raspberry juice. It's made with Splenda and has 10 carbs per cup. About an 6 oz portion (good amount) works out to be about 2 carbs as I get get about 10 portions per recipe. It's easy to make, takes me under 5 minutes.
In a 2 quart bowl, start with 1/3 cup Splenda (1/2 if you like it sweeter) and 2 packets of unflavored gelatine. (I'm about to buy this in bulk to make it less expensive). Slowly add 1 cup of boiling water while constantly whisking until everything, especially the gelatine in dissolved. Then I add a cup of cold water and 2 cups of the juice.
I usually make it in a pyrex bowl with lid and after it's cooled a bit I just shove it in the fridge.
With a dollop of whipped cream, it's outstanding. It's more costly then the brands, but I feel it's worth it to not be eating all those dyes, etc. BTW it does turn out a dark pink. My husband and I both love it.
