  • Double Chocolate Walnut Brownies

    I found this recipe today online, and it looks so good!!!
    I haven't made it yet, but I will




    Double Chocolate Walnut Brownies

    1 1/2 tablespoons wheat bran, or oat bran
    1 1/4 cups plus 1/2 tablespoon soy flour
    4 ounces unsweetened baking chocolate
    1/2 cup unsalted butter
    2 cups sugar substitute (recommended: Splenda)
    1/2 cup heavy cream
    5 large eggs
    1 tablespoon no sugar added vanilla extract
    2 teaspoons baking powder
    1/2 cup chopped walnuts
    Low Carb Chocolate Frosting, recipe follows Special Equipment: 8-inch square baking pan

    Preheat oven to 325 degrees F. Spray pan with nonstick vegetable oil cooking spray. Set aside. Mix wheat bran and 1/2 tablespoon soy flour together and sprinkle evenly over the inside of the greased pan, also coating the sides.

    Place the unsweetened chocolate and butter in a steel bowl and melt over a saucepan of simmering water. Whisk in 1 cup sugar substitute and 1/4 cup heavy cream. Once thoroughly blended, turn off heat and keep warm until needed.

    With an electric mixer on high, beat the eggs, 1 cup sugar substitute and the vanilla extract just until blended. Reduce to low speed and then blend in the chocolate mixture.

    With a wooden spoon, mix in the baking powder, 1 1/4 cups soy flour, walnuts, and 1/4 cup heavy cream. Spread evenly into the prepared pan and bake on the center rack for 35 to 40 minutes, or until a toothpick inserted in the center comes out clean. (Do not over-bake or brownies will be dry and hard.) Cool completely before frosting with low carb chocolate frosting. Cut into 5 rows by 5 rows to make 25 pieces.

    Low Carb Chocolate Frosting:
    3 tablespoons unsalted butter, softened (not melted)
    5 tablespoons unsweetened cocoa powder
    1 cup sugar substitute (recommended: Splenda)
    1/3 cup heavy cream
    1 teaspoon no sugar added vanilla extract
    Few drops hot water, as needed, to thin consistencyPlace all ingredients in a medium bowl and whisk until well combined. Use to frost brownies, but make sure brownies are completely cooled, or the butter in the frosting will melt.

    Do you think you can use almond flour instead of wheat bran or oat bran???

        maybe almond flour instead of soy flour and keep the bran. i personally think that soy flour imparts a weird fishy taste to everything.

          Soy flour does have a strong taste that doesn't really disappear with baking.

          Should you choose to keep all ingredients, this recipe is not legal until Rung 9, Whole Grains. If you ditch the oat and wheat bran, it will be legal on Rung 6, Legumes. If you use Almond flour in place of the other two flours/brans, it will be legal on Rung 3, Nuts and Seeds.

          This looks totally dangerous for me, I was a brownie addict! So I'll be steering clear of this one...oh but they do look delish, don't they?

              looks really good but i could NEVER stop with just one!!! I MUST STEER CLEAR OF THESE!!! i would not stop until the whole pan was gone...no no no no no!!!!!!!

                OMG, you aren't kidding! If it isn't a one-serving recipe, I'm sunk! NO willpower where that's concerned! (Unless I shared it all with my siblings who are trying to low-carb... hmmmm!)

                    Hey, I actually made these today, and they're AWESOME! I'm not a frosted-brownie or a nutty-brownie person, so I made them plain. They don't taste "soy"-ish at all. I'm going to freak Geoff out...I ate one out of the pan, and I'll be gone when he gets home from work so I won't be able to tell him that they're made with soy flour. He'll probably think I fell off the wagon and ate a REAL brownie!

                    This recipe gets 5 STARS!!!

                      I wouldn't even know where to look in the store for it...cereal???

                      I just threw out my soy flour cause I had it forever and never thought I'd use it

                          Nicole--it says to cut 5 rows and 5 columns for 25 brownies. YIKES! I did 12 servings, 3x4 rows. BUT, I also omitted the frosting and walnuts, so it's not that horrible for ya.

                          I have Bob's Red Mill Wheat Bran, but I didn't actually use it--I just used the soy flour. It's for "flouring the pan" and actually, I think the brownies would be better if the pan were just greased thoroughly without the soy flour/wheat bran. I'm not sure if I bought the wheat bran at the grocery store, or at the health food store. It should be by the flours? I can't remember...!

                          That's kind of why I made them yesterday--I have loads of soy flour, and I NEVER use it!
