  • Two different Cheesecake Recipes

    I got these two recipes out of the www.3fatchicks.com recipe mailing list. I have not tried them, I have tried mixing key lime juice, cream cheese, and splenda, to taste, and it was really yummy.

    these didn't include carb count, you will need to figure based on the products/brands that you use. I'm a newbie, LOL, and I don't know how to do that without the products in hand.



    Crustless Cheesecake
    12 oz softened cream cheese
    3 packets of Splenda
    1 tsp. vanilla extract
    1 cup heavy cream
    1/2 cup quartered strawberries

    Combine the cream cheese, sugar and vanilla in a bowl and mix well.
    Beat the heavy cream in a bowl until it forms soft peaks.
    Fold the whipped cream into the cream cheese mixture.

    Transfer the mixture to a large glass bowl and chill, covered with plastic
    wrap, for at least 25 minutes. Top with berries.
    Can be stored in fridge for up to 2 days.
    2.6 grams per slice. (net carbs)
    Serves 8

    Quick Jello Cheesecake
    1 package any flavor jello 10 oz of crystal light the same flavor as jello 2
    packages of philadelphia cream cheese mix all ingredients in a blender and
    put in the refrigerator - or freezer (I think it tastes better in the refrig)
    until firm. This is delicious

    Hi arose --- I'm rather new to Atkins and have just purchased my first box of Splenda --- (it's coming up on TOM). My question is: how much is in a "packet" in your recipe --- my splenda is loose in the box......thanks!

      I haven't tried these yet, and, I also purchase my splenda by the box, since I save a couple of dollars that way.

      I am assuming that a packet is probably equal to one teaspoon full, although I am not certain. That would be the amount I would use, if I were making this, one packet = one teaspoon.

      I haven't tried any cheesecakes, because, although I seldom ate cheesecake in my pre-low carb days, it was one of my favorites. I am afraid if I tried it, I would eat the whole thing.

          Vanilla extract, what kind is everyone using? My pure vanilla extract has corn syrup as the last ingredient.

            Actually, one packet = 1/2 tsp. It says on the box that one packet = 2 tsp of sugar, but that's a measure of sweetness. The one packet only FILLS 1/2 of a teaspoon.. does that make sense or did I just botch up the works for ya?

            Actually, that's just what I've determined from experience, so maybe someone else can tell you better, but I'd say it's pretty safe to use that measurement.
