White Chocolate Strawberry Mousse
2 cups strawberries, cut in small pieces
1/4 cup Splenda
1 cup heavy cream
1/4 teaspoon arrowroot powder
8 ounces cream cheese, at room temperature
1/2 cup cold water
1 teaspoon vanilla extract
1 package Jell-o white chocolate sugar-free fat-free instant pudding
mix
Place cut up strawberries in a small bowl and sprinkle with the
Splenda. Stir until Splenda is dissolved; set aside.
Whip the heavy cream with the arrowroot until stiff peaks form.
Refrigerate until ready to use.
Place cream cheese in a medium-sized bowl and beat with an electric
mixer at high speed until light and fluffy. Beat in the water a
little at a time until it is all incorporated. Add the vanilla and
instant pudding mix and beat until thoroughly blended.
Stir the strawberries into the mixture by hand (don't use the mixer
or the strawberry pieces will be pulverized). Gently fold in the
whipped cream. Spoon into individual ramekins or dessert glasses and
chill until ready to serve.
Servings: 8
