I was asked to bring a low carb dessert to Christmas and came up with a simple recipe for bread pudding using some low carb eggnog we found at the grocery store - it's made with Splenda! Thought I'd share:
1 cup low carb eggnog
1 cup heavy whipping cream
2 cups water
8 slices low carb bread, cubed
2 eggs, beaten
3/4 cup Splenda
1 tsp vanilla
1/4 tsp cinnamon
1/8 tsp nutmeg
pinch of salt
Preheat oven to 375. In a saucepan combine eggnog, heavy whipping cream, and water. Heat over medium heat until simmering. Place bread cubes in a greased casserole dish and cover with eggnog mixture. Allow to soak for 10 minutes.
In a separate bowl combine eggs, Splenda, vanilla, cinnamon, nutmeg, and salt. Gently fold into bread mixture until combined. Place casserole dish in oven and cook for 45 minutes, or until set.
Serve warm, with whipped cream or low carb ice cream if desired.
