OMG you guys!!!
I just made the YUMMIEST muffins!!! And they came out to only 2 net carbs each!!!
I was bored so I went in the kitchen and just started throwing things together. I'm in a creative mood today [img]images/smilies/biggrin.gif[/img] lol
Anyways, here is what I came up with...
Oh a quick P.S. there is a great recipe site that you can put in all the ingredients and it will save your recipe and give you the nutritional facts.

That's how I figure out the nutritional info. Anyways here it is (can you tell I like naming things after myself...lmao)...
Niki's Berry Cream Muffins
Ingredients
2oz raspberries (or other berries of your choice)
1 cup almond flour
1/4 cup flax seed meal
4oz softened cream cheese
1tsp baking powder
1tbsp oil
1/4 cup ricotta cheese
1tsp vanilla extract
2 eggs
Sweetzfree (I used 25-30 drops) or Splenda to taste
Directions
Pre heat oven to 425*
Crush raspberries. Then mix all ingredients well in large mixing bowl. Once mixed, grease muffin tin.
Distribute batter evenly into 12 muffin cups. Bake at 425* for 10 minutes.
I tried it with butter and with cream cheese. It tastes best with butter [img]images/smilies/smile.gif[/img]
Number of Servings: 12
