I made these tonight and I liked them. I wanted to put frosting on them...lmao!!! Can you guys tell I like REALLY sweet stuff
I got the recipe from Linda's site. I put in my own ingredients and counts into a recipe program and came out with different numbers then her. I was also only able to make 12 small cookies (she made 20...not sure how cause mine were small). Anyways, here it is with a pic, and the Nutritional facts
COCONUT CRISPS
1 ounce almond flour
2 ounces unsweetened coconut
1/8 teaspoon salt
Sweetzfree or 2 tablespoons granular Splenda (if you use Splenda add the carbs).
1/8 teaspoon vanilla
1 egg white
Mix all ingredients well in a small bowl. Everything should be moist and the dough should hold together. Drop dough by teaspoons onto baking sheet. Roll each piece of dough into a ball and flatten in your hands to make cookie shape.
Makes 12 cookies
Bake at 325ยบ for 15-20 minutes, or until golden brown. You want them nice and brown, but don't let them get too dark or they'll taste burnt. It's ok for the centers to be a bit lighter than the outer edges, but they should not be pale.
Number of Servings: 12
Nutritional Info (per 1 Coconut Crisp)

I ate them with coffee and it was really tasty
I ate to many though
