This was made for me yesterday by a chef when I told him I could not eat sugar. It is unbelievably gorgeous. Mind you I have not tried making myself yet - maybe you need to be a chef, I've never been great at getting souffles to rise!
This makes 2 souffles, in ramekin dishes.
A little melted butter
1 tablespoons and a little more Splenda
2 egg yolks
4 egg whites
2 oz mixed berries
Put all but about 6-8 nice looking berries (you keep them to garnish) into a bowl and zap for a couple of mins in the microwave, until just warm, but not hot. Then puree very well in a blender.
Rub the melted butter around the inside of the ramekins and sprinke with the "little more" part of the splenda.
Beat the egg yolks and the rest of the Spenda together very well. Mix in the berry puree. Beat the egg whites until they are stiff then fold into the berry mixture.
Put into the ramekins, rub a knife quickly around the inside edge of each ramekin (apparantly this helps them to rise, who knows, but that's what the guy said!) and then put straight into the oven for 10 mins at 200C, which I believe is about 390-400F.
Serve immediately with the reserved berries and fresh whipped cream.
