Lemon Jello cheese cake

  • Lemon Jello cheese cake

    1 small carton of whipping cream (half pint)
    1 small lemon diet jello
    4 oz. softened cream cheese
    3 packets of splenda
    vanilla

    Whip the cream to soft peaks
    desolve the jello in 1 cup of hot water
    To the whipped cream add the hot jello mix, add the soft cream cheese, vanilla, and 3 pkgs. of splenda.
    With your mixer, blend all these ingredients until smooth.

    Pour this mixture into a glass or corning dish ( it will be runny ) and then place into your freezer or refrigerator. I put it into my freezer for 15 minutes and it setup.

    If you want a soft dessert put it into the refrigerator, if you want a frozen dessert this freezes well. You decide

    We love the lemon flavor , so I decided to experiment and see if I could come up with a winner, I think I did, what do you think?? we just tasted this and I know I will be using this recipe when I need to make a dessert for special occations.

    I am not sure how you figure the carbs. The cream cheese is the only ingredient that has carbs in it. The package says 1 carb per tablespoon. If someone knows how many tablespoons in 4 ozs. of cream cheese then we would know how many carbs per one recipe. So as you can see this will be LOW CARB.

    Only problem I see is the Jello has aspartame in it.

    This is fabulous! I made it today. I wouldn't call it a cheesecake though; at least mine is not at all the consistency of a cheese cake since it's very light and fluffy. I like not having the sour cream in there; that also distinguishes it from the other low-carb cheesecakes I've tried.

    I did it a little differently from your directions. I beat the jello/hot water together with the cream cheese, splenda and vanilla and then gently folded in the whipped cream.

    It is delicious! Two things I wish I did differently:

    1. Put into small serving sized bowls instead of one big bowl

    2. Frozen more. I froze one small serving and it was excellent. I liked it better than the non-frozen, almost like an ice cream treat. Since mine is now all in one big bowl and has set, I don't think I'd get good results freezing it. Hence the reason for #1 above!

    Thanks for the recipe. I look forward to trying it with different jello flavors.

      Thanks Rubymama for your reply . I think you have improved my creation. I never thought of folding in the jello, cream cheese, vanilla mixture into the whipped cream. Sound yummy!
      The only carbs is in the cream cheese. The package says 1 carb per 2 tablespoons of cream cheese, so I know it hardly has any carbs.
      I have tried the recipe with lime jello and it is good too.
      I took my mom some today with the lime jello and she had me write down the recipe and go to the store so she could make it for herself, she was impressed.

        How Much Vanilla

        I want to try this recipe, but have never cooked with vanilla. How much do I put in?

          it takes very little vanilla extract, fill the lid of the vanilla bottle and add it to the recipe. I have found that I use less cream cheese, like 2 oz. instead of 4 oz. for this recipe. less carbs and it still tastes good. Hope you like it.

            Vanilla and Freezing

            Thanks Becky Sue. I tried the recipe and it was great. The only problem I had was freezing. The treats were great after a little while in the freezer, but when I tried one which had been frozen overnight, I found it to be too hard. Is there anything you can add to keep the texture more ice cream like when freezing for a long time?

              I agree that overnite in the freezer the dessert is to hard. We now eat it after it sets up in the fridge. I like the fluffy texture. melts in your mouth. But we really like the lemon flavor. Lime jello makes a good alternative too. I am happy you liked this recipe. My mom used to make a jello cheesecake that was similar in flavor, other than all the sugar or condensed sweetened milk. So I just tried to come close and my family think this is a close second to mom's.
              It may be that if you added a little bit of cool whip to this mixture it may not freeze so hard. I have heard of this trick for making homemade icecream from freezeing to hard. Just a thought.

                I made this and it was good! I didn't have lemon jello so I used raspberry and threw in some Atkins raspberry syrup. Loved it! Thanks.

                  3 packets = what meaurement of the box splenda?

                  Can I put it in the fridge after I freeze it?

                    Peaches,
                    in the recipe use 3 tsp. of slenda.
                    put the mixture into your refrigerator and it will jell and be like a creamy jello. you might put a portion of the ingredients in a small bowl and freeze it and see if you like it frozen. It does freeze pretty hard, kinda like homemade icecream does.

                      I made it!

                      It was excellent! AND I divided it, into 2 containers and only half a day so that is 1 carb? This is the best dessert, YUM!!
