  • Pudding Pie

    here's a recipe that my hubby and i made last night for pudding pie:

    crust:
    1 1/2 cups crushed almonds (i put a bunch in a ziploc bag and smashed with a hammer to a powder-like state)
    3 tbs butter, melted
    3 packets Splenda

    mix ingredients and then press into bottom of shallow baking pan. bake in oven on 350 for about 15 - 20 minutes. remove and let cool.

    filling

    1 box sugar-free jello pudding (your choice of flavor)
    2 cups heavy whipping cream
    1 cup water

    beat ingredients until you get to the consistency you like. i made mine thick and fluffy. then spread on cooled crust and place in fridge for at least an hour. serve and enjoy!

    not good for induction.

    If you add an 8 oz packet of cream cheese to this and nix 1 cup of heavy cream its divine!
