Here's the recipe for my new guiltless indulgence! At only .3 grams of net carbs, it's the perfect treat and fibre fill up. These bake up nice and dense but light and almost crumbly as well. They remind me of a cookie that my Middle Eastern best friend's mom used to make when I was in highschool in Trinidad.
This is also a great recipe for anyone following a Candida Cleanse. The coconut oil is excellent for killing yeast and it does not contain any sweetners other than stevia which is the only allowed sweetner on a Candida diet. Plus there is lots of fibre here and it really satisfies my sweet tooth/crunchy cravings.
In a medium bowl, mix together well:
In another bowl beat until light and fluffy:
Mix dry ingredients into wet ingredients gradually. This will make a very stiff batter. Do not add any other liquids. Form into balls, place on cookie sheet and press down slightly to form cookie shape. Makes 24 cookies.
Bake at 350 celcius for approx 30 minutes. Cool, store in container.
Total net carbs per cookie = 0.3g
* I just learned that butter is not a candida safe food because it is dairy - of course! Clarified butter is safe though, and can be made by boiling butter until the white froth rises to the top. Skim it off and discard, because that's the dairy whey - what's left behind is clarified butter

3/4 cups of whey protein isolate powder
3T psyllium husk
2 Tablespoons cinnamon powder (amount is correct)
1/2 Tsp ginger
1/2 tsp nutmeg
