This recipe came about as the result of trying to salvage a recipe for "LC Donuts" which I could swear I found originally on this site. However trying to locate it again in order to credit the original author has turned up zero posts. So here is the modified version which created beautiful looking cookies. The original recipe did not include any sweetener, I used three droppers of flavored stevia - and it was NOT enough. In my next batch I will try erythritol in combination with Stevia, since I don't use Splenda.
1 cup chocolate protein powder(I use Jay Robb brand)
1/2 cup water
one egg
two tablespoons sour cream
one tablespoon wondercocoa
1 1/2 cup flax meal ( I used bob's golden flaxseed meal)
(Insert your own favorite sweetener and adjust carbs accordingly)
Coconut oil for frying
Mix everything together and end up with a goopy batter. Drop tablespoons full into the hot oil. Allow to fry for a few minutes until the bottom becomes crisp. flip over and squash with spatula to make cookie shape. fry for a few minutes and flip one more time to cook the squished out batter on the other side. I was able to get 16 cookies out of the recipe, which were crunchy on the outside and chewy on the inside.
Fitday pc gave me 104 g of carb with 98 g of fiber for the entire recipe. Which comes out to less than one carb per cookie. Adjust that amount as needed depending upon the sweetener you use.
Even though my original recipe was not sweet, I was able to make tasty little cream cheese and calorie free jam sandwiches out of it that I could toss in my lunch bag for breakfast. I'm looking forward to making it again with the erythritol and having a sweet tasting cookie. Also thinking about subbing some of the flax for almond meal, which might make it even tastier though slightly higher in carb. LC chocolate chips would make a nice addition also. I think the flavors could be altered by using a vanilla protein powder and cinnamon instead of wondercocoa, and perhaps subbing peanut butter instead of sour cream.
