I really, really wanted cake, and what better kind than chocolate? I've done the microwave muffins and such, but was really missing the texture of an actual cake. having had good results with coconut flour, and nice results with almond flour for various things, I brainstormed and came up with this! I'd consider a filling and icing, but I have to find one I like first.
it's a lot of ingredients, but it turns out soooo nicely.
I'll post variations of the recipe. this was the recipe combo that was the best.
In a large bowl, whisk together:
4 eggs
1/2 cup cream
1 dropper full of vanilla stevia
1 tsp vanilla extract
in a microwave safe bowl, melt together:
6 squares (small) Lindt 99% cocoa chocolate
1/2 cup butter
3 squares chocoperfection dark chocolate
in a smaller mixing bowl, mix:
2 scoops protein powder (I've been using vanilla)
2 tbsp thickenthin not-starch thickener (I use one notstarch and one notsugar)
1/4 cup coconut flour
1/4 cup almond flour
1/4 cup cocoa (I don't mess around when it comes to chocolate!)
just under 1/2 cup xylitol or erythritol (or half and half)
1 tsp baking powder
pinch salt
mix the chocolate/butter mixture into the egg/cream/vanilla mixture. add dry ingredients, mix well. pour into a lined pan, bake at 375 for 30 minutes, or until a toothpick comes out clean.
nobody believes it's low carb/flourless/sugarless!
If you don't have either of the chocolates I used, use 1/2 cup of GOOD quality cocoa, and add an extra egg. I think you could replace the thickenthin with xanthan gum. I haven't tried it, but it could work!
this recipe also works well as muffins/cupcakes.
